Since this unit comes ready to install as a double stacked model with two independent ovens, it provides double the capacity in the same footprint as a single oven. This model features a boilerless design that is designed to reduce service calls and a touchscreen controls system that brings the best cooking technology into your kitchen.
These boilerless combi ovens operate by using steam injection systems rather than built-in boilers, eliminating the additional service and cleaning needed to properly maintain boilers. When steam is required, water is injected directly onto the heating elements resulting in steam that is then disbursed throughout the oven cavities. Since this double oven has multiple cooking modes, you can select the option with the ideal amount of steam for what you are trying to accomplish. Plus, since the two ovens in this double stacked configuration are independent of each other, you can operate them either in the same mode, or in different modes at the same time.
Using simple touchscreen controls, this double combi oven can store up to 500 recipes per oven with up to 15 steps each. The controls also monitor the manual and automatic cooling, humidity pulsing, rack timers that let you set individual cooking times for each shelf, and the reversible 9-speed fans. You can also run the cleaning cycle as needed through simple control settings. Plus, data and programming are easy to maintain since each oven has a USB port for data transfer and to download HACCP documentation.
Each oven comes with a line-up of accessories that make use simple and easy. From the internal core temperature probe with multiple measuring points for precise cooking to the three oven racks and the detachable hand shower, this double combi oven offers all the conveniences you want in a small, compact footprint. Each oven can hold up to (4) 2 1/2" deep 2/3 size food pans at one time.
The oven exteriors are made with type 430 stainless steel sides, tops, and backs, while the bottoms, doors, and interiors are made of type 304 stainless steel. The cool touch doors ensure safe use and are field convertible from left hinged to right hinged. The each door has a viewing window for easy monitoring of food, and the two-stage door latches make sure that the fans are stopped before the doors are opened to reduce the risk of burns from steam.
A 208V, 3 phase, 5.4 kW electrical connection is required for each oven in this double stacked unit.
