Customer Q&A Ask a Question

What is the difference between a Mandarin wok and a Cantonese wok?
The difference is in the style of the handle. Mandarin woks feature a long stick handle, while Cantonese woks have two small loop handles, giving cooks a choice of whichever best fits their style.
My item arrived coated with a thin layer of oil. What is this oil for, and is it ready for immediate use?
Some carbon steel pans and woks are shipped with a protective oil coating from the factory to prevent them from rusting before their first use. They must be thoroughly washed with warm soapy water to remove all traces of the oil, and then properly seasoned before use.
What is the appropriate lid size for my wok?
While lid size can be a preference based on what you're cooking, you generally want your lid to be approximately 1" - 2" smaller in diameter than your wok. This is so the lid can securely sit inside the rounded edges of your wok.
What is a wok ring used for, and how do I decide which is right for me?
A wok ring is used to turn a traditional range into a wok-friendly range. It serves to stabilize your wok and funnel the heat appropriately around the rounded edges as a wok range would. Generally, you want your wok ring's diameter to be 4" smaller than the wok you are using.

For a carbon steel pan, start by washing, rinsing, and drying the pan. Heat the pan on your range on medium to high heat, then add shortening to the pan. Use a clean dry towel to spread the shortening around the interior of the pan, creating an even coat. Remove the pan from the heat, wipe out the excess shortening and let it cool. You can repeat this process up to 3 more times. For a cast iron skillet, preheat your oven to 400 degrees Fahrenheit. Line a baking pan with aluminum foil and set aside. Wash, rinse, and dry your skillet. Place the skillet in the oven for 15 minutes. Remove and coat the entire skillet with shortening, inside and out. Place the skillet in the oven for 45 minutes with the baking pan on a rack below it to catch any mess. You can repeat this process up to three more times.

On the first use, the black wok outside got mixed to the food. I had to throw. will probably not buy this item again from here. Bad experience.

Bigger than expected. Heavy duty feel so get the ring to help avoid arm strain. Love having a wok this size for stir fry foods. Definitely good for commercial use, a bit much for the home.
You cannot beat the price for this Mandarin style 16 inch wok. It’s the perfect size, any bigger is a little clunky and hard to handle. This one is deep enough to handle a large order of fried rice
We have used this wok a handful of times now and it works great! Just remember to season it correctly before using and we have no problems cleaning it or keeping food from sticking to the side walls. The handle also stays cool because it is hollow. Would purchase again!
I am very happy with the quality of my 16 " Mandarin Wok ... I stirred up two bunches of Broccoli raab and it was a pleasure to cook it all at once and not have it falling out of my pan . Great for quick stir fry meals .
I Love this wok ! It looks just like the kind I see when I go to a local chinese take out restuarant. The size of this wok allows me to stir fry a bulk sized bag of my favorite mixed vegetables, or rice , or most other foods requiring steaming. The optional ring lifts the pan at least 2 inches above the direct flame fior better control. The wok isn’t fancy , just a plain looking sturdy cooking device , that will give you years of good use. My only detraction is that I wish the handle was more user friendly. The handle is round and hollow, It would have been easier had the handle been flat with perhaps a hard-plastic covering, but other than that, great cooking device, highly recommend.
The Town 16” Mandarin Wok is excellent. It heats evenly and can hold up to a lot of use. The Handle doesn’t get too hot and it is sturdy, it is very easy to clean and the price is great. You can’t go wrong with this item!
This work is a bit thin so the metal bends easily. Time will tell whether it will warp beyond usable. It's still pretty good for the price. The bottom isn't perfectly round either but doesn't seem noticeable while stir-frying with a wok ladle. I recommend 16" and larger wok to stir fry Asian vegetables or cooking for 3 or more people.

It is the good product. Material is suit to use for hard work in the kitchen. Absolutely easy to clean. It is quick reaching to high heat.
A great 36" mandarin wok that is perfectly for making fried rice. The edges are high so its easy to stir and flip without making a mess. The wok is very well made.
Large 16' wok's allowing cooking multiple same entrees at a time. In a 14' wok I can cook 2 fried rices at the same time but I end up lossing a lot of rice during the tossing process. Recommended if you do heavy volume.
Light weight, fast reaction to changes in heat. Mandarin handle is longer and helps keep hand away from the flame compared to Cantonese style. Weld is a bit rough and could have been ground down better.

This wok looks really nice, WILL NOT FIT ON NORMAL STOVE/BURNER, ONLY ORDER FOR COMMERCIAL EQUIPMENT. Besides that it is a great wok and will last lifetimes if properly cared for.
Unbelievable product for such a great price. Works great at home with my gas stove top creating my stir-fry recipes with ease. Take your time to properly season this pan.
The price is fantastic on this wok! Made of high quality material and it cooks evenly. Large enough to hold plenty of food. Cleans up easily too!

The work is made of quality materials so it works perfect for Asian food or any other thing that you need the pan really how.
Simple, durable and tremendous value! I now have 2 of these and use directly on charcoal on my grill for Farmers Market demonstrations. Easy clean an maintain.
16" wok make it easier to cook a large batch of food items. Heat is distributed evenly even with high heat. Must burn the grease off before cooking and season after use.
Nice big 16" pan. I use it to fry out fresh made hash brown. Holds lots of potato and oil. Cleans up easy and better then expected.
omg I cant believe this pan is so inexpensive. its the perfect pan. I use it for my pineapple fried rice its deep enough not to make a mess on my oven, its really heavy due pan.
Excellent that's the one. Get it very fast before the holiday season. Good price you will find them at store for far more, here is good .
This is great wok. It is a bit heavy for me, I don't have strong hand, but every one who uses they all say. It is a good hand work out.
We bought this wok for home use but will probably take it to the restaurant due to it being a bit larger than expected. Once pre-seasoned this wok worked perfectly without any sticking. It is very well balanced and easy to work with.
This is a BIG wok. Very heavy duty, perfect for making a foodservice amount of stir fried rice or sauteed vegetables. Only thing I wish it had was a loop at the end of the handle to hang from a pot rack.
This Mandarin style wok is great for home use! You can use it on an electric range with an affordable wok ring! Great for healthy stir fry dishes!!
This is great wok. It is a bit heavy, but it is good for heat even distributor. It is great for home and order by order cook. I am sure I will buy more.
The 16" Mandarin Wok is nice and heavy to heat food evenly! Just the right size for the home chef.A nice find from the Webstaurantstore.
