You can even use mild, soapy water during the cleaning process as well, so long as you dry and oil the fry pan afterwards.

How is top diameter measured in frying pans, and how accurate is this measurement?
The top diameter is the measurement across the frying pan from the interior of one side of the rim to the other. These dimensions are a close approximation as many frying pans have a curved upper rim, which makes precise measurement difficult. The standard naming is by top diameter, so although multiple brands have a 10” frying pan, there will likely be a small variation between each brand’s 10” pan.
How is Lodge's pre-seasoned cookware seasoned?
All of Lodge's pre-seasoned cookware is seasoned with soy-based vegetable oil. No peanut oil or animal fat is used.
What's the difference between a riveted and a welded handle?
A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.

For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. Both are long lasting solutions for fry and sauce pan handles because they are durable and can withstand heat.
My new cast iron feels rough in some areas. Is this normal?
Yes. This is a result of the sand casting process. With use and replenishment of the seasoning, the pan will become smoother. Unlike other types of cookware, Lodge Cast Iron only gets better with use. For concerns about roughness, it is OK to use a fine grade of sandpaper to smooth out the rough areas. Make sure to re-season the item before using.
How can I properly care for cast iron surfaces?
In order to prevent unwanted build-up of oils, grease, and food, surfaces should be cleaned after use while still slightly warm. Harsh chemicals or scouring pads should not be used—only hot water and a cloth or sponge are needed. If some areas require extra cleaning, a mild scouring pad can be used. This isn't the best pan for handheld flipping of food, but is awesome to use tools in because of the low lip. Seasons easily, browns food better than anything else I've used. I think there are better options out there, but you won't be poorly served by lodge.

Very sturdy and solid weight. Handle length and angle worked well for flipping food. The pan came in preseason and ready to cook. Works just like cast iron pans but with a lighter weight

These are excellent skillets. They have exceptional heat distribution and cook food evenly. They are the closest skillets to cast iron without the weight. When properly seasoned they have the same non-stick characteristics as cast iron and wipe clean easily.

I was happy with this Lodge French style carbon steel fry pan. It heated it quickly and evenly. The 12" is a good size for most of my cooking needs. I would recommend getting the silicone handle holder to go with it.

The Lodge 12” Pre-Seasones French Style Carbon Steel Fry Pan is heavy weight and sturdy. The handle doesn’t get too hot and is easy to grip. It heats evenly and nothing sticks to the bottom of the pan. It is very durable and easy to clean. It is great for both residential and commercial use.

After spending the better part of the past year building up my cast iron cookware collection I wanted to open up my horizons to include some different tools. Once I saw that Lodge also offered a nice line of carbon steel products I knew I had to invest in a few pieces. The biggest benefit of carbon steel is the lighter weight. This allows the skillet to heat up much quicker than cast iron. This proved to be extremely useful when I needed to quickly toast some cumin, coriander and black peppercorns. I only need to use the skillet for a few minutes and it just didn’t make sense to have to go through the effort just to use my cast iron.

In love with this skillet, it has became the most used one for cooking meat, which can be seared perfectly, and vegetable. Cleaning is very easy, just use warm water and a steel wool pad and when dry apply a thin oil coating to keep the natural no stick properties. It is made of thick steel but it is light enough to be handled with one hand.

I highly recommend lodge carbon steel skillets, they are heavy duty and the handles are riveted. I love cast iron but find myself more often going to this skillet. One thing I really like about this skillet is that It reacts quickly to heat whereas cast iron retains the heat longer. Carbon steel will react with acidic foods just like cast iron does so careful with the sauces or you'll soon have to re-season your pan. My 12" carbon steel skillet also doubles as a lid for my 12" cast iron skillet.
