Warped Bottom; Still a Favorite Pan... Love this pan. Perfect slope for tossing a saute. Large enough bottom for a couple steaks. Super hot fast for a great sear. Long handle stays cool so no pot holder required. Easy to season. Easy to clean. Perfect. Except the bottom warped during seasoning and subsequently worsened with use. Still a good pan, but not as stable on the range top as one would like. Please tell me I don't have to buy a pan the name of which I cannot pronounce in order to get a flat bottom....
As with all carbon pan, you will need to season it first before using and it'll become non stick, i like the high sides of these pan
I ordered the Vollrath Carbon steel pan not knowing how it would work out but I was really amazed. The pan is nice and sturdy. The handle is long and at a very high angle. Unlike other peoples review, the handle lenglt and weigh did not tip my pan over. It was well balanced.
Where was this pan all my life! I like simple, robust stuff. Stuff that lasts. This pan is amazing, it has good balance and right amount of weight to it. This can be a great gift so anyone who likes to cook.
Similar to another review, the pan came warped in the center. It also has a large handle which adds weight to it. The weight seems to add to the problem of not sitting flat on the cooktop. Gas ranges would likely not matter but I’m using induction and of course, it must be flat. See photo.Thank you for your feedback! Great pan. Very high quality for the price. You can't cook everything in it (no acidic foods) but is great for high fat searing and sauteing. I pick out recipes just so I can use this pan. Still building up the seasoning but its getting blacker and blacker. Still not sure about seasoning the bottom?
The Vollrath Carbon Steel Fry Pan 12 1/2” - French Style is a great quality Fry Pan. The handle is firmly attached and it doesn’t get too hot. It is very sturdy and it heats evenly. It is great for residential and commercial use.
I use this at home but it is used at least twice a day. I can't believe I spent all the money on other pans. This carbon steel is fantastic. Yes it did take some work to season but now completely non-stick, great even heat distribution and at such a low cost.
Great medium size pan that will hold up to a gas range, have not used it on electric. Does just fine going in and out of ovens and cleans up really easy.
Every kitchen should have a few carbon steel pans. They are light weight, built to last,easy to clean and very affordable. I'll be buying more of f these
I really like this pan. Took awhile to season it and i wont be using flaxseed oil as ive seen on some videos..since this smelled up my house like fish. The pan is very strong and well built.
I love French style fry pans. We have been using Vollrath line of cookware in our catering business for sometime now. It's a small expense for a quality pan
All carbon steel pans seem to have that “lifted” handle. My best guess is that it may help with heat dispersion. Today, I only cook with carbon steel and cast iron (my wife still likes the coated stuff). In a month, the folks where I live are gonna have a block type yard sale; I plan to get rid of a ton of All-Clad, Calphalon, etc. that I no longer use. Vollrath makes good products that are made to last a lifetime. FWIW, I think Vollrath is one of the very best I have used. TC
