Indulge in a truly unique cheese creation with this LaClare Family Creamery cloth-bound aged Chandoka cheese! This cheese was created by LaClare in 2012; the cheesemakers drew inspiration from traditional cloth-bound New Zealand style cheddar cheeses to create this unparalleled culinary delight. Made from a unique blend of 70% cow's milk and 30% goat's milk, this cheese features an appealing, slightly earthy aroma. Its pressed curds are wrapped in muslin bandages and aged on cheddar boards for over 8 months, creating a wonderfully complex bouquet that bears similarities to many cheddar cheeses. Chandoka's flavor profile begins with the tangy taste of goat's milk, but mellows out to reveal the buttery, slightly sweet flavor of cow's milk, finally finishing with hints of citrus and grass. Its dense, semi-firm texture gives it a delightfully rich, almost fudgy mouthfeel. It's perfect for slicing, cubing, or grating!
This unique cheese is sure to be a standout on the cheese plate or charcuterie board at your next event! Its fairly mellow, cheddar-like flavor profile will appeal to cheese lovers of all stripes, while its complexity offers something for true connoisseurs to enjoy as well. When selecting beverage pairings for Chandoka, opt for bold, yet not overpowering flavors, like Chardonnay, Italian red wines or Cabernets that aren't too tannic, crisp, pilsner-style ales, floral IPAs, and dry ciders. To incorporate Chandoka into your menu, use it as a substitute for traditional cheddar in nearly any recipe. It adds delicious richness when shredded over salads or pasta dishes, and can be used to make an especially creamy, complex mac 'n' cheese. You can also slice and use it to add flavor to your sandwiches or hamburgers! Your patrons are sure to love its rich tantalizing flavor.
