To prepare a full 5 lb. batch of 2" (1 oz.) biscuits, add 4 1/2 cups of cool water into a stand mixer bowl and add the mix. Using a paddle, mix on low speed for 1 minute. Turn the dough out onto floured surface, roll out, and fold in half. Roll to a 1/2" thickness and cut with a biscuit cutter. Place the dough side by side with their edges touching on an ungreased sheet pan and bake at 425 degrees Fahrenheit for 14-16 minutes
