To prepare a full box of mix, begin by measuring out 5 1/4 cups of cool water (approximately 72 degrees Fahrenheit). Combine the water and package of mix in the bowl of your stand mixer. Mix using a paddle attachment on low speed for 20 seconds. Stop the mixer, scrape down the bowl and paddle, and mix on low speed for an additional 20 seconds. If adding additional ingredients, fold them in on low speed, mixing for an additional 20 seconds. Line your muffin tins with parchment paper or generously grease them, then add the batter using your desired scoop size. Bake in a convection oven heated to 375 degrees Fahrenheit for 10-12 minutes or in a conventional oven heated to 425 degrees Fahrenheit for 16-18 minutes. The muffins are fully baked when their centers spring back when lightly touched.
