Test the dough's temperature to make sure it is 80 degrees Fahrenheit. Allow the dough to ferment at room temperature, covered, for 45 minutes to 1 hour, then cut it into (5) 10 lb. pieces and loaf up. Rest for 15 minutes before cutting, then give 3/4 proof with just enough moisture to prevent crusting. Fry at 375 degrees Fahrenheit for 50-55 seconds per side.
