This mix is made from a blend of whole grain sorghum flour, potato starch, and tapioca flour, as well as sugar, baking powder, salt, xanthan gum, and vanilla powder. The inclusion of whole grain sorghum flour makes this cake both delicious and nutritious: because it's made from whole grains, this flour is especially high in fiber, so it helps to promote healthy digestion. Sorghum flour is also packed with protein, antioxidants, and essential nutrients like iron. Thanks to its mild taste and smooth texture, sorghum makes a great substitute for wheat flour in this cake mix! Whipping up delicious cakes and cupcakes is easy with this gluten-free vanilla yellow cake mix! Begin by preheating your oven to 325 degrees Fahrenheit and oiling (2) 8" round non-stick baking pans, then line them with parchment paper. In a large mixing bowl, combine 3 eggs, 1/2 cup of melted butter or oil, and 1/2 cup of water. Mix at medium speed for 30 seconds, then add 539 grams of cake mix and beat for an additional 60 seconds at medium speed, scraping the sides of the bowl with a spatula as you go. Divide the batter between the pans and smooth the tops with a spatula. Transfer your pans to the oven; place them 3" apart on the middle rack and bake for 30 to 35 minutes, or until a toothpick inserted into the middle of the pans comes out clean. Cool the cakes in pans on a wire rack for 15 minutes, then carefully run a knife around the outside of the pan to loosen cakes before inverting onto separate plates to allow the cakes to cool completely before frosting.
