Introduce your patrons to a rich Belgian classic: Chimay Grand Classique cheese! From the cellars of the Scourmont Abbey in Chimay, Belgium comes this rich and traditional Trappist cheese. Trappist monasteries have been making cheese and brewing beer for centuries, and this classic Chimay cheese is a fine specimen of Trappist expertise. Its pungent-yet-mild flavor is noted for being lightly tangy with lovely floral overtones. Because of the high quality milk used in making this cheese, it is especially creamy and smooth! The aromatic cheese is semi-soft, with an elastic, pliable texture that's great for melting.
Cheese and beer are a classic Trappist pairing. The fatty, semi-soft cow's milk cheese creates a pleasant coating on the mouth and palette that allows the taste of the cheese to linger as you sip your beer so that the flavors are able to mingle and create a uniquely delicious experience. As you might expect, this Chimay Grand Classique cheese pairs especially well with Chimay beer since the same traditions and expertise are used to make both: their complementary flavors were quite literally made for each other! However, this cheese is also nicely complemented by beer brewed in any one of the world's 13 Trappist monasteries. To create an elaborate cheese plate or charcuterie board that will further enhance the experience of a cheese-and-beer sampling, try serving this cheese alongside fresh or dried stone fruits like peaches, apricots, or nectarines, pears, almonds, or thinly sliced dried meats. If you're interested in pairing this cheese with wine, opt for a red that's full-bodied but not too tannic, like a fruity Merlot or mild Pinot Noir. To infuse the flavor of this cheese into your menu, try serving Chimay classic anywhere that calls for melted cheese. It's a great way to spice up a grilled ham sandwich or create rich cheesy potatoes. To create a trendy Chimay Raclette, heat a slice of this cheese in a Raclette dish or in cast iron and serve at the table over soft, roasted potatoes! Whether incorporated into an elaborate entree, served next to a hearty glass of Trappist beer, or simply enjoyed on its own, this Chimay cheese will be a perfect addition to your establishment.
In 1872, monks at the Scourmont Abbey began making Chimay cheese. Within the monastery's walls, monks oversaw the production of this cheese and regularly washed its rind in their very own Chimay beer before the cheese was sent down to the quiet, dark vaulted cellars below to age for 6 to 8 weeks. The creation of this cheese enabled the monks to nourish themselves and support the abbey by selling it, which also offered an opportunity to give back to the local population with the proceeds. Today, Chimay cheese is made in much the same way: monks follow traditional recipes and strict guidelines to produce a flavorful line of traditional cheeses and beers, all while donating the majority of their profits to local charities. Stock your establishment with the finest cheeses Belgium has to offer with Chimay products!
