In 1872, monks at the Scourmont Abbey began making Chimay cheese. The creation of this cheese enabled the monks to nourish themselves and support the abbey by selling it, which also offered an opportunity to give back to the local population with the proceeds. Today, Chimay cheese is made in much the same way: monks follow traditional recipes and strict guidelines to produce a flavorful line of traditional cheeses and beers, all while donating the majority of their profits to local charities.
