Hello, my name is Matthias Kleber. I'm the head of the National Chef Team of Germany. For me, a good knife must be sharp all the time. How do you easily and safely resharpen your knives? I will now show you. I put my sharpening steel onto a non-slip surface. The optimum angle for resharpening a knife is 20 degrees. How do I find this angle? I spot the knife at a 90 degree angle to the steel. Half of that is 45 degrees. Nearly half of that is 20 degrees. Then I pull my knife from the bolster to the tip, using light, flowing movements, alternating 5 to 6 times along the sharpening steel. Now your knife is sharp again. Enjoy smooth and easy cutting! As a chef, I safely resharpen my knives in movements away from my body. Here, I also use the same 20 degree angle and alternate 5 to 6 times using light, flowing movements.
