I purchased Victorinox 12" Butcher Knife with Granton Edge and am not disappointed to say the least. I used this knife over the weekend to cut hundreds of lbs. of ribeye and after I can say I am truly impressed. I prefer the firm blade when cutting ribeye muscle and this knife cuts through ribeye like it was butter, Victorinox is a bit more costly than other brands but the quality is worth paying a little extra. Blade sharp right from factory, blade has enough length to cut larger muscles and is surprisingly light weight for it's size.
