Mercer: How to Clean and Store Knives

Watch this video to learn how to clean and store knives.

Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. After you have removed visible dirt from the blade of your knife, clean the handle with soapy water. Rinse the knife thoroughly under running water. Dry the knife by using a clean dishtowel. Wash kitchen knives immediately after using them so that the food does not dry on their blades. It is never accepted to place your knife in a drawer without a plastic guard. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. A magnetic bar is a wall mounted magnetic bar design to hold knives firmly in place.

Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

    An excellent all-around, all-purpose knife combining the features of a chef's knife and that of a slicer into one. The modestly-curved blade allows some rocking of the knife back and forth for mincing, chopping, and dicing. The perpendicular, scalloped grooves minimize friction, and, thus, improve separation without shredding, making it ideal for cutting thinner slices of vegetables and meats while retaining much of their juices. The combination of a razor-sharp blade and good weight distribution makes most knife work effortless. Its only detraction is some grooves are not uniformly spaced from the cutting edge of the blade. I don't see this phenomenon shown on product pictures, but on my knife, the grooves are closer to the edge (at least on the left face) as the blade begins to taper towards the tip. This can potentially reduce the life expectancy of the knife if the blade is to ever undergo enough sharpening sessions to the point where the edge meets any one of the grooves, rendering the knife useless. Still, the grooves are far away enough that it would take a substantial number of refreshes before this ever becomes an issue. The overall length of the knife is 12-1/4"; the handle at 4-7/16". Minus 1 star for uneven groove placement. Great price for two knives in one.

    Mercer in my opinion make the best chefs knives for overall value, by that I mean they are of the highest quality and priced at an affordable price point. This santoku 7 inch with a granton edge is very sharp great for all kinds of prep work and has an excellent grippy santoprene handle

    This is an affordable high quality chefs knife perfect for multiple prep work in the kitchen especially cutting veggies nice granton edge keeps food from sticking to knife blade. Santoprene handle allows for a tight secure grip when cutting.

    One of my most used knives. This is a real workhorse. Holds edge well. Only hand wash, this is not something you want to run through your dishwasher.

    Our chef has used many knives and this is the one he repeatedly asks us to order time and time again. You can spend more but the Mercer line makes a great knife. We highly recommend them and they are the only brands we use in our kitchen.

    No complaints whatsoever. Easy to keep sharp, very comfortable to grip and use, and outstandingly sharp right out of the package. I've especially been enjoying the ability to rock the knife slightly, and it really speeds up chopping herbs/garlic. After using it every day for over a year, I'm wondering if they left off a digit from the price, as this knife easily outdoes knives many time the cost. It's truly a great deal, and would be a great deal at twice the price!

    As a culinary student, we are supplied with mercer cutlery, so when I found a Santoku made by Mercer, I jumped for it. It works great! Super sharp, yet is light enough to do vegetable work. Great hybrid of a Japanese and European knife.

    I've only had this knife for a few days, but I already love it. This well-balanced, forged steel knife is great for making stir fry. The blade was quite sharp and has held it's edge so far.

    We purchased this knife for my son as a gift and it was used to cater his Bar Mitzvah.     Nicely constructed, feels great in your hand. I would strongly recommend this for a prep station, I like the the feel, it's not a cheap plastic and it keeps you in fully engaged in your work. Great addition

    I have been researching and testing knives of all quality and prices and the mercer genesis line is one of the best I've seen. The quality cannot be beat for the price. I have been using this knife for a few months now and not only is it comfortable, but it has stayed sharp. I got the sharpening steel and plan on using it eventually but the knife has not needed it yet.

    I already have other Mercer Genesis knives and this one is no different. For the price you can't get a better knife. Super sharp. Cuts right through anything you throw at it! I definitely recommend it to any chef!

    This is a fantastic knife for the price. Keeps its edge pretty well and easily sharpened. Love the neoprene-like handle. The blade has a bit of weight to it and balances well in my hands. Technically, it has scalloped sides, rather than a real Granton edge, where the scallops run all the way down to the edge. So, it's really a straight edge knife. Whether prepping veges or smaller chunks of meat, sometime I prefer shorter blade than the traditional chef's knife and Santoku knives really makes the chore easier for me.

    I have had this knife for a couple of months now, and it is by far my favorite all purpose knife in my kitchen. It arrived very fast and was as sharp as a razor blade, which is a good thing for a knife. It has had no trouble handling even the toughest cutting tasks, and I have not had any problem with maintaining its edge. I hone it on a steel each time before I use it. You will not go wrong with purchasing this knife.
