Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. After you have removed visible dirt from the blade of your knife, clean the handle with soapy water. Rinse the knife thoroughly under running water. Dry the knife by using a clean dishtowel. Wash kitchen knives immediately after using them so that the food does not dry on their blades. It is never accepted to place your knife in a drawer without a plastic guard. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. A magnetic bar is a wall mounted magnetic bar design to hold knives firmly in place.

    An excellent all-around, all-purpose knife combining the features of a chef's knife and that of a slicer into one. The modestly-curved blade allows some rocking of the knife back and forth for mincing, chopping, and dicing. The perpendicular, scalloped grooves minimize friction, and, thus, improve separation without shredding, making it ideal for cutting thinner slices of vegetables and meats while retaining much of their juices. The combination of a razor-sharp blade and good weight distribution makes most knife work effortless. Its only detraction is some grooves are not uniformly spaced from the cutting edge of the blade. I don't see this phenomenon shown on product pictures, but on my knife, the grooves are closer to the edge (at least on the left face) as the blade begins to taper towards the tip. This can potentially reduce the life expectancy of the knife if the blade is to ever undergo enough sharpening sessions to the point where the edge meets any one of the grooves, rendering the knife useless. Still, the grooves are far away enough that it would take a substantial number of refreshes before this ever becomes an issue. The overall length of the knife is 12-1/4"; the handle at 4-7/16". Minus 1 star for uneven groove placement. Great price for two knives in one. Read Less Read More
    Offering full popular fare +vegan, these are the go-to knives for our entire staff. Familiar feel to the most accomplished kitcheneers they provide surety, balance, comfort, outstanding edge retention, longevity, and excellent release. With others 3 times their cost in the blocks these are the ones constantly working. Staff favorite to be sure. We use the thiner, high carbon version for veg prep and they work a charm.
    I have wanted a Santoku knife for a long time . I love to cook and the average knives I had at home just weren't cutting it !!!! Literally . I found the Mercer 7" Santoku knife . .. The price was right , I took a chance and I could not be happier . Slicing , chopping and prep work is a breeze . The blade is excellent quality as well as the handle that feels great in my hand as well as being the perfect weight .
    My first impression of this knife is that it sits very nicely in the hand and has a great weight to it. It has an extremely sharp edge which after a few weeks of use has held its edge well.
    Just purchased this knife for my son in law as part of his holiday gift. He loved it and has said he finds it to be a very high quality knife. Glad I purchased it for him!

    Mercer in my opinion make the best chefs knives for overall value, by that I mean they are of the highest quality and priced at an affordable price point. This santoku 7 inch with a granton edge is very sharp great for all kinds of prep work and has an excellent grippy santoprene handle
    One of my most used knives. This is a real workhorse. Holds edge well. Only hand wash, this is not something you want to run through your dishwasher.
    Our chef has used many knives and this is the one he repeatedly asks us to order time and time again. You can spend more but the Mercer line makes a great knife. We highly recommend them and they are the only brands we use in our kitchen.

    No complaints whatsoever. Easy to keep sharp, very comfortable to grip and use, and outstandingly sharp right out of the package. I've especially been enjoying the ability to rock the knife slightly, and it really speeds up chopping herbs/garlic. After using it every day for over a year, I'm wondering if they left off a digit from the price, as this knife easily outdoes knives many time the cost. It's truly a great deal, and would be a great deal at twice the price!

    Great Mercer Santoku kinife. Mercer are some of the best knives we have ever used. Very sharp and hold their edge. This is a good quality product.
    As a culinary student, we are supplied with mercer cutlery, so when I found a Santoku made by Mercer, I jumped for it. It works great! Super sharp, yet is light enough to do vegetable work. Great hybrid of a Japanese and European knife.
