A commercial mixer is a critical part of many foodservice businesses, especially bakeries. That’s why we’ve laid out our commercial mixers according to the major factors that most impact their performance. The first consideration is the type of mixer that you want. Planetary mixers are the most common and versatile type. They mix ingredients together in batter or dough with whisks, beaters, or hooks, for high volume jobs. Spiral mixers are great for specializing in dough and with other mixtures that have a thick texture, making them great for bread and pretzel bakeries. Last, vertical cutter mixers can be used like a giant blender for everything from salad prep to dough preparation but it gives your baked goods a different consistency than dough prepared in other mixers. Each of these mixer types is also divided into standard, medium, and heavy duty applications. Standard duty mixers give you the power needed to create foods in smaller batches. Medium duty models are good for larger quantities of food and keep up with demand. And heavy duty units are the best in terms of strength, reliability, durability, and power for bakeries and pizzerias. Every commercial mixer also comes with a different transmission. Belt driven units use a simple strap system, similar to an engine belt, to turn the agitator inside the mixing bowl which makes them easier to maintain and repair. Direct drive mixers let you change speeds with the simple push of a button, and gear driven mixers utilize an intricate inner assembly of gears and cogs to prevent slips and stutters. Finally , variable speed mixers are made specifically to deliver torque and power for light duty use. Mixers are also available with different size bowls, from 5 – 220 quarts to accommodate the quantity of ingredients that you want to mix together. Depending on the size, you can use a smaller unit on the countertop or a work table, while a larger product is best used on the floor. You can also find commercial mixers with different speed options to operate quickly or slowly, and each commercial mixer comes with an internal motor that ranges from ½ to 7 hp. Cleaning instructions. Always disconnect or unplug the electrical power from the mixer before cleaning. Dilute detergent per supplier's instruction. Do not hose down or pressure wash the mixer. Never use a scrubber pad, steel wool, or abrasive material to clean the mixer. Never use bleach, sodium hypo chlorite, or bleach-based cleaner. Always remove the agitator after each batch as the agitator can become stuck on the shaft and become difficult to remove. The entire mixer, including removable parts, must be thoroughly cleaned and sanititzed using the procedures identified by your local health department and the ServSafe essentials published by the Natural Restaurant Association Education Foundation (NRAEF). This is a truly commercial grade mixer that we designed from the ground up to be very powerful. The power plant in this is an 800W DC motor. That's about 2 to 2.5 times the industry standard. Because of that, we can do a full 4 lb. dough ball at a 50% absorption ratio when the industry standard is only about 2 to 2.5 lb. Any time you have a DC motor, you're going to develop a lot of heat in the DC motor controller circuit. You've got to get that heat out of there. We have an exclusive design with two ventilation ports on the sides, and a ventilation port on the back. This creates a vortex of air to pull the hot air out and bring cool air back in. That's what helps us develop the full 4 lb. dough ball. It also has 10 fixed speeds. The bowl guard is Lexan plastic with a built-in ingredient chute. We hold the bowl securely with two clamps on the side. One of the keys to our design is a heavier gauge stainless steel, but it also has a fully roll-formed top. That creates a lot of strength so that this bowl has no give whatsoever. This allows us, in our design, to have the tools fit right up against the edge of the bowl and all the way to the bottom. You get a perfect mix to the edge, a perfect mix to the bottom, and you don't have to stop in the middle and use a spatula to scrape away on the sides. This mixer has three tools: a batter beater, a wire whip, and dough hook, all of which are stainless steel, not aluminum.     10/5 possible stars. This thing is a beast. I make lots and lots of french bread, and this monster powers right thru. Doesn't even break a sweat when doing anything smaller. The 10 speed control is awesome and it can be adjusted to any speed in need. The dial is great, and so is not being limited to 3 speeds on a lever. The 3 attachments are fully stainless and can take a beating as well. If you are a small shop that a large 10qt mixer is just too big, but the lighter duty smaller mixers just are not powerful enough, this is the mixer to get.

    we bought a total of 11 of these mixers so for! they are a great price for a hard working machine, they are so much better than the 5qt Hobart mixers that we have. would gladly buy this over Hobart any day

    Initially I was worried about purchasing this mixer because there are very few reviews online or on YouTube videos for the Globe SP5. I am very happy I purchased the Globe and not the Kitchen Aid products. This mixer is primarily used for making bread. I use a 68% - 72% mix and it powers through as if its cake batter. I mean absolutely no resistance. Makes a smooth supple dough. There had been a review on this mixer that stated the dough hook does not mix well. I found that with a small batch 500g flour that I had to scrape the sides a couple of times but anything over 750g no scraping or problems at all. Also the Kitchen Aid attachments fit the #10 drive and so dose the "C dough hook OEM Kitchen Aid" so it seems to me that a lot of the parts are interchangeable. The reason I spent the extra money was that the gears are not "pressed metal" like the Kitchen Aid, but are forged and machined gears and drive parts. The Globe SP5 is quiet even on the max 10 speed especially compared to the KA. I would never have look at another stand mixer if it weren't for all of the replacement gears and kits floating around for the Kitchen Aid and all of the repair YouTube videos. I didn't want spend the money and wonder as I am mixing a 1000g batch if this was going to be it when it breaks so I am thrilled with the Globe SP5. It is a great machine and I am very happy with my purchase. Ray Read Less Read More
    This is the worst mixer I have ever owned. I am going on my third mixer in 2 years. All I use it for is cake batter and frosting. I have had a kitchenaid mixer for 9 years and it is still going strong. It is a smaller kitchenaid and I mix them same things in it. I will never again waste my money on a Globe mixer.

    I have had this mixer a few months now, and made single loaves of bread, pizza dough, and pasta. I stay within the manufacturer's weight/speed maximums and have had no issues. The pasta is especially nice, and comes out far better than it did when I made it in the food processor.
    I am so in love with my Globe SP5 it is as described not loud and mix well. My only dislike is that it is narrow for me to scrap the sides. Later I will post photos or videos. But besides the narrow bowl it is a great machine. Oh I made my Brown sugar pecan Carmel pound cake delicious lol.
