Customer Q&A Ask a Question

What's the difference between an insulated and non-insulated holding cabinet?
Insulated and non-insulated holding cabinets both offer the same function by holding food at safe temperatures for hours until ready to serve, but for best results it's important to make a purchase based on your desired application. Non-Insulated Holding Cabinets are intended for applications where the doors will be closed for the majority of the day, such as proofing bread or keeping back-up portions hot. Insulated Holding Cabinets are better suited for keeping food hot when the doors will be opened and closed much more frequently, since they are better equipped at retaining the heat.
How does ambient room temperature influence the performance of this cabinet?
Ambient room temperature can affect the temperature of your food product at holding/proofing. Due to differences in ambient room temperature, you may need to monitor the proofing process and/or adjust the proofing temperature and humidity settings of your Avantco heated holding/proofing cabinet to achieve the desired results. You may also need to adjust the temperature of the water used to produce steam.

In proofing mode, once steam is generated from the water contained in the bottom water pan, adjustments can be made to release heat in order to reach the desired temperature. If you are trying to proof at low temperatures, the desired proofing temperature must be warmer than the ambient temperature in your kitchen.

This Avantco heated holding/proofing cabinet operates at the following temperatures in heat and proof modes:

Heat Mode: 80°F – 185°F
Proof Mode: 85°F – 115°F (30-100% Humidity)

Thanks to the LED display located on the base of the unit, it's easy to monitor the temperature and maintain your ideal conditions. The proof mode is also user friendly, featuring adjustable humidity settings between 30 and 95 percent up to 115 degrees Fahrenheit. When deciding on the right holding / proofing cabinet for your business, you have the choice of insulated or non-insulated. Non-insulated models are more economical up front and tend to fit better in low volume operations. For more frequent use, insulated cabinets offer excellent heat retention, making them more energy efficient and saving you money in the long run. Avantco holding / proofing cabinets have clear, Lexan doors, so it's quick and easy to check on the contents inside. Magnetic seals and tight-fitting gaskets also make sure that the heat doesn't escape, while the 5" casters provide excellent mobility for maximum convenience as well as cleaning and maintenance. Compact proofer that I use for my yeast breads in the bakery. Easy to use and easy to clean. Small size, but perfect for a shop that doesn't produce huge amounts of breads on a daily basis.

Absolutely love my proofer. It's made my job at my bakery so much easier. I can produce much more buns without the risk of my dough drying out.
this items comes not perfect finish, so keep in mind here and there has scratches but they said it is normal as it is not build for show off or something. I test 1 time, but fail....it seems the manual is not as accurate as what it says to proof pizza dough...still testing. there is a short fall on this machine is the electric wire, the hook is not big enough to tight it, so there is no point this machine can be moving everywhere easily because the hook cannot hold the whole wire. On the other hand, the wire is not long enough, seems it is a 3 feet but I need 5 feet I believe 5 to 6 feet work best because if you design this machine can keep food warm during any outdoor catering, a little longer wire helps to resolve a lot of difficult situation
