Keep hot foods at the perfect temperature and ready to serve at a moment's notice with this compact, versatile unit! With a proofing mode and adjustable humidity settings, you can also proof dough before it's ready to bake. At just 30 5/8" tall, it's easy to roll this unit under a counter or work table! It has an output of 1440W and requires a 120V electrical connection. In heat mode, this model operates between 80 and 185 degrees Fahrenheit; in proof mode, it operates between 85 and 115 degrees Fahrenheit at 30-100% humidity.

With humidity levels adjustable from 30% to 95% and 9 different temperature settings, you'll be able to accomplish the right results every time! A simple toggle switch lets you select between the "heat" and "proof" modes, while the vibrant LED temperature display makes it easy to keep an eye on things from across the room.
The durable aluminum interior contains fixed pan slides set on 1 1/2" increments. You can easily place up to 12 full size sheet pans on whichever level is convenient.
Stainless Steel Water Pan
To use the proofing mode, simply fill the pan with water, select the proofing mode and your desired humidity level!
This holding and proofing cabinet's crystal-clear door makes it easy to see what's inside without opening it. Magnetic catches plus a tight-fitting gasket keep the door closed when it's supposed to be, and hot air in!
Thanks to this cabinet's 5" poly casters, you can load it up in your prep area, and then roll it out closer to the serving line to keep backups close at hand. Brakes on the front wheels will keep it in place once you've rolled it right where you want it.
Built-in corner bumpers protect your walls from scuffs and bumps while you're rolling from one area to another.
An integrated cord wrap on the back will keep the power cord off the floor and out of the way while you roll the cabinet.

In proofing mode, once steam is generated from the water contained in the bottom water pan, adjustments can be made to release heat in order to reach the desired temperature. If you are trying to proof at low temperatures, the desired proofing temperature must be warmer than the ambient temperature in your kitchen.
This Avantco heated holding/proofing cabinet operates at the following temperatures in heat and proof modes:
Heat Mode: 80°F – 185°F
Proof Mode: 85°F – 115°F (30-100% Humidity)

this items comes not perfect finish, so keep in mind here and there has scratches but they said it is normal as it is not build for show off or something. I test 1 time, but fail....it seems the manual is not as accurate as what it says to proof pizza dough...still testing. there is a short fall on this machine is the electric wire, the hook is not big enough to tight it, so there is no point this machine can be moving everywhere easily because the hook cannot hold the whole wire. On the other hand, the wire is not long enough, seems it is a 3 feet but I need 5 feet I believe 5 to 6 feet work best because if you design this machine can keep food warm during any outdoor catering, a little longer wire helps to resolve a lot of difficult situation
