Designed to keep all your freshly cooked food items hot until they're ready to serve, this Main Street Equipment HPU-1812 undercounter half size non-insulated heated holding / proofing cabinet helps ensure your restaurant, diner, or bakery is always prepared for high-volume meal periods. In heat mode, this model operates from 80-185 degrees Fahrenheit; in proof mode, it operates from 85-115 degrees Fahrenheit at 30-100% humidity. With 9 different temperature settings, you'll be able to accomplish the right results every time!

This unit has fixed pan slides set on 1 1/2" increments. You can easily place up to 11 full size 18" x 26" sheet pans on whichever level is convenient. A Lexan clear door provides outstanding impact and heat resistance and allows for easy monitoring of the contents inside. The door is paired with magnets and a tight-fitting gasket to ensure the warm air inside does not escape. You can also reverse the door hinges based on your needs.

This unit includes a pair of dials on the bottom control drawer for easy operation. Plus, the control dials are removable for quick cleaning. A simple toggle switch lets you select between the heat and proof modes, and the vibrant LED temperature display makes it easy to keep an eye on things from across the room.

Thanks to (4) 5" poly casters, this cabinet can be filled and moved from your prep location to the serving area with incredible ease. Built-in corner bumpers protect your walls from scuffs and bumps while moving the unit from one area to another. At just 30 1/2" tall, it's easy to roll this unit under a counter or work table. An integrated cord wrap on the back will keep the power cord off the floor and out of the way while you transport the cabinet. This cabinet has an output of 1,440W and requires a 120V electrical connection.

How does ambient room temperature influence the performance of this cabinet?

Ambient room temperature can affect the temperature of your food product at holding/proofing. Due to differences in ambient room temperature, you may need to monitor the proofing process and/or adjust the proofing temperature and humidity settings of your heated holding/proofing cabinet to achieve the desired results. You may also need to adjust the temperature of the water used to produce steam.

In proofing mode, once steam is generated from the water contained in the bottom water pan, adjustments can be made to release heat in order to reach the desired temperature. If you are trying to proof at low temperatures, the desired proofing temperature must be warmer than the ambient temperature in your kitchen.

This heated holding/proofing cabinet operates at the following temperatures in heat and proof modes:

Heat Mode: 80°F – 185°F
Proof Mode: 85°F – 115°F (30-100% Humidity)

The proofing function of this cabinet works best when it’s filled to near maximum capacity. A greater amount of dough will absorb excess humidity, keeping the cabinet temperature at the lower range.

What's the difference between an insulated and non-insulated holding cabinet?

Insulated and non-insulated holding cabinets both offer the same function by holding food at safe temperatures for hours until ready to serve, but for best results it's important to make a purchase based on your desired application. Non-Insulated Holding Cabinets are intended for applications where the doors will be closed for the majority of the day, such as proofing bread or keeping back-up portions hot. Insulated Holding Cabinets are better suited for keeping food hot when the doors will be opened and closed much more frequently, since they are better equipped at retaining the heat.
