This is a commercial grade, stainless pan which I prefer over anything with a fancy name and three times the price. I have some experience cooking in a commercial kitchen and I do a lot of cooking at home. This pan is very heavy and slower to heat than a lesser grade, stainless pan, but it heats evenly and retains the heat even after you after you remove it from the stove. This pan has a non stick coating, which is eventually going to wear out like all non stick pans, no matter what the price. It's very well constructed and I wouldn't consider using anything else. I also have a larger one WITHOUT the non stick coating. Perfect for browning and braising meats or a large stir fry.

We use the fry pan to cook a frittata. It does lose some of it's non stick surface after daily use and repetitive washing, so I don't really see the difference between this and buying a frying pan a more expensive pan from a different company

Fry pan did not heat evenly and non stick coating pealed after 6 months use in spite of hand washing and low heat cooking. Vollrath refused to stand behind product because it was beyond 90 days making this a throw away fry pan. Purchased replacement for (different manufacturer) which cooks evenly on our induction range and has a lifetime warranty.

Thank you for your review! We're sorry this pan did not work for your needs. We recommend trying this 11" Non-Stick Aluminum-Clad Stainless Steel Fry Pan instead. Its aluminum clad bottom will help distribute a more even heat on your induction burner.

high quality construction. I've been looking at the retail type of pots and pans, caphalon, cuisenart, etc.... I always find gaps in where the handles connect to the pan and other flaws that make me walk away, plus they are very expensive. this commercial cookware is very inexpensive by comparison and the quality is so much better than the so called "high end" pseudo-commercial stuff. no need to ever look at the retail brands again, this is great!
