What's the difference between a riveted and a welded handle?
A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.

For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. Both are long lasting solutions for fry and sauce pan handles because they are durable and can withstand heat.
My item arrived coated with a thin layer of oil. What is this oil for, and is it ready for immediate use?
Some carbon steel pans and woks are shipped with a protective oil coating from the factory to prevent them from rusting before their first use. They must be thoroughly washed with warm soapy water to remove all traces of the oil, and then properly seasoned before use.
How is top diameter measured in frying pans, and how accurate is this measurement?
The top diameter is the measurement across the frying pan from the interior of one side of the rim to the other. These dimensions are a close approximation as many frying pans have a curved upper rim, which makes precise measurement difficult. The standard naming is by top diameter, so although multiple brands have a 10” frying pan, there will likely be a small variation between each brand’s 10” pan.

Vollrath Carbon Steel Fry Pan Seasoning

Watch and learn as Chef Rich explains how to season carbon steel or cast iron fry pans! With just a little flax seed oil and some patience, your pans will be nonstick in no time.

For a carbon steel pan, start by washing, rinsing, and drying the pan. Heat the pan on your range on medium to high heat, then add shortening to the pan. Use a clean dry towel to spread the shortening around the interior of the pan, creating an even coat. Remove the pan from the heat, wipe out the excess shortening and let it cool. You can repeat this process up to 3 more times. For a cast iron skillet, preheat your oven to 400 degrees Fahrenheit. Line a baking pan with aluminum foil and set aside. Wash, rinse, and dry your skillet. Place the skillet in the oven for 15 minutes. Remove and coat the entire skillet with shortening, inside and out. Place the skillet in the oven for 45 minutes with the baking pan on a rack below it to catch any mess. You can repeat this process up to three more times.

Welcome to Vollrath University. I'm Chef Rich and today we're going to talk about how to season a cast iron or a carbon steel fry pan. Raw iron pans, when you first receive them, they don't cook very well. Food will stick and they'll also rust, so that's why you want to season these pans. There's many different types of seasonings and methods that people have used throughout the years, talking about the differences in oils and techniques. Lately I've been reading a lot about flax seed oil and today I'm going to show you how to use flax seed oil on a stove top to season a carbon steel fry pan. Raw steel pans, which is carbon steel and cast iron, are typically shipped like this, in a bag with light oil on them. So, the first thing you want to do when you receive your new pan is thoroughly clean the pan of all the manufacturing oils that were used and put it on the stove and begin to heat the pan. While we're waiting for our pan to warm, let's talk about flax seed oil. The reason I'm going to use flax seed oil is because it's very omega-3 fatty acids and these acids, when it reaches its smoke point, change and polymerize and further cross link and bind to the surface of the pan, the iron surface, and that's what begins to form our season coating. Now we want to turn off the heat and apply a little flax seed oil. Next, we want to take a clean cloth, paper towel, and rub that flax seed oil over the surface of the pan. We really want a nice, very, very thin layer of the oil in the pan. We don't want to see any drips or runs. So, just a nice, thin layer of the flax seed oil in the pan. Now, we return the pan to the stove and turn it to high heat. We want to heat this pan on high heat until it all reaches its smoke point and it'll begin to bond to the surface of the pan. Okay, now, after several minutes your pan will look like this. The oil has reached its smoke point and began to adhere to the pan. Now what we want to do is let that pan cool. Okay, now the pan has fully cooled, so we want to repeat the process. Warm the pan. Now, I can't emphasize enough that we don't want to rush this process. We want to take it very slow and use multiple coats of very thin oil. Now, the pan is warm. Let's go ahead and give it another coat. Again, being very careful not to have any drips or runs and let that pan have another process. You can see now that the oil has reached its smoke point and is beginning to evaporate and form that cross link to the previous layer. Okay, now you want to repeat that process of these thin layers, back to the heat, and so forth and now this pan we've done that 11 times. You can see our surface now is a very hard, smooth, very durable surface. I can't emphasize enough to use very thin coats of oil, back and forth to the heat, and then this pan we've done 11 times. Very nice surface. If you try to rush this process, what you're going to have is this. Now, you can see how splotchy it is and also it's very thick and gummy. This is because I put too much oil in to show what will happen if you try to rush this. This pan isn't going to be very durable and it's actually sticky because that oil is very gummy. Okay, now let's talk about cleaning and maintaining your seasoned pan. After using these pans, you're going to want to wash them out in the pot and pan sink with some water, a little soap, nothing too abrasive and certainly not any scouring pads. You want to keep that surface very smooth. If you should find that you need to season this pan again if you've gouged it, you can go back to the natural state by using a little oven cleaner, scouring it clean, and repeating this process again with the light coats of oil. And that's it! A nice, easy way to season your cast iron or carbon steel pans.

    Material and construction quality are good. Handle is sturdily connected to the pan. Handle is awkwardly long and sticks off the pan at a weird angle. The pan is also a little deep which can make turning certain items a little difficult. Good overall pan.

    Over all good pan, but warped slightly in the center during seasoning, may be just uneven heat versus uneven thickness. Virtually non stick after the seasoning, and clean up is easy and quick.

    I love Volrath carbon steel pans. They are the work horses of my kitchen. Virtually indestructable, and once seasoned, as non stick as teflon. Seasoning is a breeze.

    Once properly seasoned these pans will last a lifetime! Quickly heats up and stays hot! Also great for induction top burners! Nicely stacks on top of each other!!!
    Initial take: The pan arrived well packaged. The handle (as other reviews point out) does seem too long, although I knew that going in and wouldn't detract for it. It was well oiled from the factory to prevent rust and zero rust was present. So far the pan felt like a great bargain for the price compared to some of the higher priced carbon steel brands. I washed the pan thoroughly and proceeded to season it per the instructions on the Vollrath website. After warming the pan and applying oil I slowly started raising the temp, however the pan almost instantly warped very badly. One side of the pan was almost 1" higher than the other. I turned off the heat and allowed the pan to cool. Some of the warping went away, however the pan is still nowhere near flat. Obviously, this resulted in the 1 star review. At this price, it is not worth the hassle to return it. It went in the trash before ever cooking anything.

    Positives: Lighter weight/thinner gauge steel (better for tossing) and half the price compared to Matfer Bourgeat (also sold here) and the other brands that are made overseas. Also, my example has a flat bottom. It also fits on a large residential burner. Negatives: The handle had some rough and sharp edges along the sides of the grip that required smoothing out before seasoning (I used 400 grit sandpaper, but a green scotch-brite pad would work too). Also when you looked closely where the handle meets the pan, you could see the handle wasn't welded on perfectly straight, leaning ever so slightly (barely) towards the left, but without looking closely it isn't noticeable, and so far doesn't seem to affect the usage. Overall: It's a good budget alternative compared to the more expensive fancy brands, and better for tossing, but it lacks some of the quality.
    Warped Bottom; Still a Favorite Pan... Love this pan. Perfect slope for tossing a saute. Large enough bottom for a couple steaks. Super hot fast for a great sear. Long handle stays cool so no pot holder required. Easy to season. Easy to clean. Perfect. Except the bottom warped during seasoning and subsequently worsened with use. Still a good pan, but not as stable on the range top as one would like. Please tell me I don't have to buy a pan the name of which I cannot pronounce in order to get a flat bottom....
    As with all carbon pan, you will need to season it first before using and it'll become non stick, i like the high sides of these pan
    I ordered the Vollrath Carbon steel pan not knowing how it would work out but I was really amazed. The pan is nice and sturdy. The handle is long and at a very high angle. Unlike other peoples review, the handle lenglt and weigh did not tip my pan over. It was well balanced.
    Where was this pan all my life! I like simple, robust stuff. Stuff that lasts. This pan is amazing, it has good balance and right amount of weight to it. This can be a great gift so anyone who likes to cook.
    Similar to another review, the pan came warped in the center. It also has a large handle which adds weight to it. The weight seems to add to the problem of not sitting flat on the cooktop. Gas ranges would likely not matter but I’m using induction and of course, it must be flat. See photo.

    Great pan. Very high quality for the price. You can't cook everything in it (no acidic foods) but is great for high fat searing and sauteing. I pick out recipes just so I can use this pan. Still building up the seasoning but its getting blacker and blacker. Still not sure about seasoning the bottom?
    The Vollrath Carbon Steel Fry Pan 12 1/2” - French Style is a great quality Fry Pan. The handle is firmly attached and it doesn’t get too hot. It is very sturdy and it heats evenly. It is great for residential and commercial use.
    I use this at home but it is used at least twice a day. I can't believe I spent all the money on other pans. This carbon steel is fantastic. Yes it did take some work to season but now completely non-stick, great even heat distribution and at such a low cost.
    Great medium size pan that will hold up to a gas range, have not used it on electric. Does just fine going in and out of ovens and cleans up really easy.
    Every kitchen should have a few carbon steel pans. They are light weight, built to last,easy to clean and very affordable. I'll be buying more of f these
    I really like this pan. Took awhile to season it and i wont be using flaxseed oil as ive seen on some videos..since this smelled up my house like fish. The pan is very strong and well built.
    I love French style fry pans. We have been using Vollrath line of cookware in our catering business for sometime now. It's a small expense for a quality pan
    All carbon steel pans seem to have that “lifted” handle. My best guess is that it may help with heat dispersion. Today, I only cook with carbon steel and cast iron (my wife still likes the coated stuff). In a month, the folks where I live are gonna have a block type yard sale; I plan to get rid of a ton of All-Clad, Calphalon, etc. that I no longer use. Vollrath makes good products that are made to last a lifetime. FWIW, I think Vollrath is one of the very best I have used. TC
