Handle is at a high angle, and the edges are relatively unfinished and unpleasant to hold in the hand. Hit it with a sander to take the edges off. The Vollrath 58900, 8.5 inch carbon steel french style fry pan is a must have in any kitchen. We have over 20 at work, and I have 2 at home, and they ALL get used and abused. Once you have seasoned them, they are perfect and durable. If you are using these for home use, I would season them a few times, just because they won't be getting as much action, and of course oil them at the end of the night, or the end of your dinner. (watch the videos about how to season them either on webstaurantstore or even youtube if you are unsure) I will more than likely order a couple more of these for home, just because of how much we use them. We also have the larger versions of these pans at work and I know they warp a little more than these do, just in case you're looking into both. This probably won't affect you unless you have an electric coil stove.
I absolute,y love the Collrath Carbon Steel Fry Pan 8 1/2”- French Style. It is heavy weight and sturdy and great for cooking a small portion or eggs or bacon. It is very durable and easy to clean. It is great for both residential and commercial use.
This is a great smaller pan, that works well for single order items, and after years of use and abuse this thing has not dented, broken, or cracked, and my staff all but throw these things around.
So I got one of these carbon steel frypans to try out her used to use these a lot when I first started cooking I want to see if this was similar to the ones I used a little bit center but still does the job I like it I'm going to get more
Great looking pan and you can feel and see the quality. Great for steaks, I've developed a non-stick coating for it and the pan has been great thus far.

Season this pan properly and you will love it for eggs/omelets. Works best with butter and oil in the pan so not for everyone but proper seasoning and use will make it non stick.
I bought this pan to try out a french style carbon steel pan while looking at more expensive options. I decided I didn't need the more expensive pan, since this one is so great. It's a little difficult to get it seasoned, but once you do, this is a workhorse.
Oh my gosh what a pan. Not too heavy, fast as heck, cooks great, easy to care for once you train everyone how to do it.
