Thanks to this Vollrath 20800 Super Pan V® 1/8 size stainless steel false bottom, you can raise solid foods off of the bottom of your Super Pan V® steam table pans. This makes your delicious foods more visible and easier to reach in the pans. Featuring 3/8" drain holes, this false bottom also helps liquids and sauces drain properly so your foods don't become soggy or over-saturated.

This false bottom is perfect for buffet lines or catering events and is made of sturdy 300 series stainless steel, durable enough to withstand the dings and scrapes of a high volume kitchen. Finger holes are included to make it easier to remove the false bottom from the pan. This convenient stainless steel false bottom prevents ingredients from standing in juices at the bottom of the pan to ensure better-tasting foods for your buffet or catered event.

I use this in a 1/3 sized pan in a food warmer to steam hot dog buns. I'm not so sure it was worth double the price of the Choice brand one they were out of stock on, but I needed something quickly and it works. I have a few other Vollrath pans, and they are quite a bit heavier than others, so probably hold up better under heavy use, but the less expensive Choice brand is pretty good for light to medium duty.
