Buckwheat Souffle Pancake:
Bob's Red Mill unbleached all-purpose flour is scooped and poured into a bowl. Then, Bob's Red Mill buckwheat flour is measured and poured into the same bowl. Sugar, salt, cinnamon, and baking powder are added to the bowl as well. Next, all of the dry ingredients are whisked together. Egg yolks, milk, and melted butter are poured into a separate bowl. Vanilla extract is then added to the wet mix. Just egg whites and sugar are whipped together in a mixer until they are stiff. The wet ingredients are added to the dry ingredients and mixed with a spatula. Then, the whipped egg whites are folded into the mixture with a spatula. The pancake batter is poured into a ring mold on a hot pan, then flipped over so that a highly risen souffle forms. Finally, the pancakes are plated and served with butter and syrup on top.
