Bob's Red Mill: how to make Brazilian cheese buns. Hi, I'm Amanda from Bob's Red Mill Natural Foods and i'm going to show you how to make Brazilian cheese bread using Bob's Red Mill tapioca flour. Tapioca flour is also known as tapioca starch. It's just two different names for the same thing. It's made from the starch extracted from the root of the cassava plant, which is native to South America. Tapioca flour is commonly found in gluten free baking mixes and flour blends. And it's also the main ingredient in this amazing cheese bun. These little buns are a popular snack in Brazil and Argentina and it's no wonder why. They have a really unique texture that is light and chewy at the same time. They are also full of melted cheese - what's not to love about that. You'll need a blender, and in that blender we're going to put one egg, 1/4 cup of olive oil. Next we're got 2/3 cup of milk, and the star of the show: 1/2 cups of Bob's Red Mill tapioca flour. Then add 1/2 cup of grate cheese. I'm using a mix of cheddar and jack but you can use whatever kind of cheese you would like. And 1/2 tsp of salt. Put the lid on it, and you're just going to want to pulse the blender a few times until everything is all mixed together. Now we'll stop and scrape down the sides of the blender with a spatula just to make sure everything gets incorporated. We don't want any lumps of flour in there. Now that we have everything mixed together, you can pour the batter into a greased muffin tin. Fill each one of these a little more than halfway full. Bake at 400 degrees Fahrenheit for about 20 minutes until the tops of the buns are lightly browned. Look at that! the cheese is all melty, it's got the perfect amount of chewyness from the tapioca flour. This is a great snack - easy, cheesy, and just a little indulgent.
