We use this tapioca flour for our gluten free flour blend mixed with brown rice flour, potato starch, and xanthan gum. We also always use this for our Brazilian cheese bread. It must stay fresh to work in the Brazilian cheese bread, but we have loved using this and appreciate that it is gluten free and comes in a 25lb bag.
Super finely ground. Has the same consistency as cornstarch. Really good tapioca starch. I've been very happy with this in my gluten-free baking. Sold by weight, but there's a lot of volume there as well.
