All of their cheeses are cured for a minimum of 3 years, and occasionally longer to ensure the cheese's flavor meets the cheesemakers' standards. The milk used for their cheese is heat treated to control the bacteria, but being careful not to eradicate the natural healthy lactic bacilli needed for the acidic taste characteristic in sharp cheddar. Following a strict process that begins in Canada, and then exported to Lancaster County, PA to continue maturing, extreme care and time is vested into the making of their cheese.
