This Numi tea is perfect whether served hot or iced. To serve hot, simply steep 1 heaping tsp. of tea in 12 oz. of hot water for 4 minutes. Once ready, it's strong enough to handle milk, yet mild enough to be served alone. To make iced tea, steep a little extra loose leaf tea in boiling water, cool, and pour over ice. Suggested Recipe: Pu-erh Tea and Gruyere Risotto
2 heaping tbsp. Numi organic emperor's Pu-erh loose leaf tea
5 cups water
1 cup risotto rice
1 cup finely grated Gruyere cheese
1/2 cup dry white wine
2 - 3 tbsp. extra virgin olive oil
1 tbsp. butter
5 finely chopped spring onions
Salt and pepper to taste
Bring 5 cups water to a boil. Turn off the heat, add Pu-erh tea, cover, and steep for 10 minutes. Strain and set tea leaves aside. Keep tea warm on low heat. In a large skillet, saute spring onions in extra virgin olive oil. When tender, add rice and stir on high heat for two minutes until evenly coated in oil. Add wine and continue to stir until wine evaporates. Reduce heat to medium and add just enough tea to cover the rice, stir, then add one ladleful of tea at a time, waiting until the rice absorbs it before adding more. Stir vigorously. This will take between 15-20 minutes. Check if rice is done and season to taste with salt and pepper. Turn off the heat, add butter and Gruyere cheese (reserving 2 tbsp. for garnishing), and mix thoroughly. Cover and let stand for a couple of minutes to allow the cheese and butter to melt completely and the flavors to combine. Sprinkle with the reserved grated Gruyere cheese, and sliced spring onions and serve.
