This carving knife allows us to carve meats freshly on our buffet lines. They stay sharp for a long time and are easy to maneuver and clean.
The blade was dulled enough after just 1 bell pepper and 1 tomato that it didn't cut as cleanly and easily through the second tomato. I had to use a different spot on the knife. I'm not as happy with this knife as with the other Mercer knives I have.
