Thanks to its German steel construction, this knife is incredibly sharp. This makes this knife ideal for the chopping and prep of vegetables, especially if there is a need for super fine cutting.

This is an excellent vegetable knife. It has very little belly, which means most of the blade comes into contact with the board while tap-chopping. It has plenty of knuckle clearance, and the 7" length is very practical. It's long enough to be useful for moderate prep, but it's also short enough to use on a crowded line. The Mercer forged line in general is an excellent overall value. This veg knife is no exception.
