I was in the market for some new butcher knives and noticed these BPX knives from Mercer. I've purchased a few Mercer knives in the past and they perform very well for the money. This skinning knife has a solid plastic handle which I like when breaking down proteins, the handles can get gross pretty quickly and I like knowing this will clean up easy. The blade is razor sharp and the design was comfortable for long periods of use. I'm glad I found these knives.
