This thing is a beast! I've used a chef's knife or boning knife to clean and portion steaks but this is a great hybrid and perfectly suited for the task. I cleaned and portioned a night's worth of Ribeyes yesterday and the blade stood up to the task. Great weight, the blade is good and stiff so make straight cuts easy. I'm a big fan!
