If you work in a commercial kitchen you come to find nothing is more absolute than someone stealing your cutlery. So, you never buy expensive / bring in with you expensive gear unless it will never leave your sight (rare). There are a multitude of chef knives in this price range, but the DR 12443 is among the best I have ever used. Here are the reasons why: A) The blade holds its edge for an extended period. You sharpen at your desired angle (20 - 22.5 degrees is more than adequate), and as long as you practice proper knife skills, the edge will hold for weeks in a commercial setting, just make sure to hone as needed.
