These ready-to-use butter sheets make lamination simple - remove the desired number of sheets from the cooler and temper them to 46-50 degrees Fahrenheit, until they are able to bend without breaking or tearing. Place the butter in the center of your elongated sheeted dough, folding the dough over to encase the butter sheet, then continue to roll out and fold the dough at least 3 times, with the amount of folds depending on your final preparation. This butter sheet is frozen to extend its shelf life. Ensure that the butter is defrosted between 35 and 43 degrees Fahrenheit prior to use.
