This is so far my favorite knife I use it to cut up strip loins, tenderloins, And whole ribeyes. I’m constantly using it cause we sell so much steak at my work. The granton edge makes it so easy to cut threw any meat with a lot of fat in it and I get perfect portioned cuts. The edge stays so sharp I haven’t even had to hit it with a ceramic steel yet.
