Pickling is an easy, time-tested method for intensifying the sweet and sour ends of the flavor spectrum, and in doing so, escalating overall flavor. In this video, Mercer shows you how to pickle onions and add a fresh touch to your dishes.

Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. After you have removed visible dirt from the blade of your knife, clean the handle with soapy water. Rinse the knife thoroughly under running water. Dry the knife by using a clean dishtowel. Wash kitchen knives immediately after using them so that the food does not dry on their blades. It is never accepted to place your knife in a drawer without a plastic guard. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. A magnetic bar is a wall mounted magnetic bar design to hold knives firmly in place.

Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

Pickling is an easy time tested method for intensifying the sweet and sour ends of the flavor spectrum and in doing so escalating overall flavor. Pickled onions are an excellent example of this technique. To begin carefully remove the papery skin of your onion, in this case cipollini onions. Taking care not to be wasteful. After peeling slice the cipollini onions into thin rings. Remember once the onions are pickled they will lose a little bit of their volume. To pickle the onions you will need to heat up a sugar and vinegar mixture. We'll add some spices and aromatics for extra flavor. Combine all the ingredients for your pickling liquid turn it up to a boil an pour it over your sliced onions. The pickles will pick up strong sweet and sour notes from the sugar and vinegar. To intensify the color you can add a large slice of red beat to the mixture when it is hot.

    This utility knife has become my go-to knife in the kitchen. I seem to use it at least once every day. It is holding its edge very well. It is very well balanced, has a very comfortable and non-slip handle and seems to be made from high quality steel. It is very easy to clean. I use it so often I'm thinking of getting another one.
    Great little knife that holds its edge and is perfect for quick little jobs. It has a nice handle and a balance weight. Makes for a nice set when combined with the paring knife and bird's beak peeling knife.
    I bought this not expecting much for the price, maybe a basic knife at best. I was pleased with the overall quality. Its not as sturdy as a high dollar version but I can see this becoming my normal go to travel knife when I cater. I have other Mercer knives in my wish list that will now go to my cart soon.
    My go to knife for small cutting tasks. This knife is awesome! It is sharp and not heavy like others are. It also does not rust.
    I purchased these to replace my current line of utility knives from a different manufacturer. Overall they're a good knife and worth the cost. Price: Good price for a forged knife and competitively priced on webstaurantstore. Build Quality: Steel is a X50Cr Mo V15 which is hard and used in high end knives. Its very hard and stain resistant. The handle is fully covered in Santoprene which is fairly non slip. There is some heft to it since it is forged and is very sharp out of the box. Use: Very sharp and doesn't need much to go through vegetables, fruits, and meat. I do wish it had a thicker handle like the utility knives it was replacing but its thick enough and comfortable. Thickness of course is subjective. Handle width at its widest point is a little over 3/4 of an inch. Would I buy again? Yes I would. Especially from this site since they offer the best pricing.
    I purchased several Mercer knives for our church kitchen after reading reviews. I ended up purchasing several of these same knives for my home kitchen I loved them so much. They hold their edge and are really well balanced, and rival the other competitor knives. In fact, I reach for these over my more expensive knives every time.
    I have been using this knife for about a year. The edge has held up very well with normal sharpening. No discoloration of the blade. Very comfortable to work with. Have not ran in dishwasher, but I never do with my knives - even cheap ones. Very pleased with the Mercer Genesis line and will be filling out my set over time.
    I have one employee that doesn't like chef knives as much as she likes paring knives, but as we all know, these two knives are not interchangeable. I highly recommend having a few of these on hand for those that do not have the best knife skills.
    I received this utility knife after sampling and handling some of the expensive brands. The Mercer has a different gripping (a special polymer rubber) which feels perfect in your hand and gives absolutely nothing up to either the other expensive brands I tried. Most culinary schools and many chefs swear by these. Highly recommended.

    We've used this knife several times since purchasing. It's a good size for small to medium sized jobs. The blade size and nonslip grip are great for this size of knife. Sometimes we've found that handles are skimped on for smaller knives, but not so with this brand. Really pleased with it. This is the third Mercer knife we've bought and highly recommend them.
    The Mercer Genesis series are fantastic knives. They have a nice balance and just feel good in your hand. I liked this 5" utility knife so much that I've ordered a second one.
    This knife works well and holds a decent edge. The most notable feature of this knife is it's santoprene handle. It offers excellent grip both wet and dry. The bolster of the knife impedes sharpening and the issue will become more and more of a nuisance as more of the blade is sharpened away.
    We love this knife! It is a light blade with a nice weight in the handle and the blade is super sharp. We have since bought extras to give as gifts for other home chefs. Another excellent product at an unbeatable price.
    Amazing knife for cutting small veggies and other items. This and the Mercer Genesis 6" Forged Chef's knife with full Tang Blade are my "go-to" knives for pretty much everything. I don't think you can find better knives (quality, weight, sharpness) for the price
    This Mercer Pairing knife is great to cut small fruits and to reach in all the small places ion your foods while preparing them. easy to handle and fits in any to go knife pouch. Always good to have.
    I can't say enough good things about the Mercer genesis line. Are they the best knives money can buy? No. Are they an incredible deal? Yes! There is a reason most culinary schools have students purchase these knives...value. If your looking for knives to throw around the kitchen and bang out prep, these are a great alternative to the more expensive brands/lines. At these prices they are practically disposable.
