Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. After you have removed visible dirt from the blade of your knife, clean the handle with soapy water. Rinse the knife thoroughly under running water. Dry the knife by using a clean dishtowel. Wash kitchen knives immediately after using them so that the food does not dry on their blades. It is never accepted to place your knife in a drawer without a plastic guard. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. If you've spent any meaningful amount of time in the kitchen you have cooked with garlic it is one of the most versatile ingredients on earth. So versatile in fact that almost every cuisine on the planet uses it. Today well show you how to prepare smooth garlic paste. Begin by breaking apart the head of garlic. You can do this with your hands or with a knife if the head is very hard. Once you've freed the cloves carefully trim the root and then give it a tight pinch and twist an you will feel the skin loosen. Carefully use your paring knife to clean the skin away from the clove. Once the garlic cloves are all cleaned you usually need to remove the germ, as the garlic matures the germ in the center grows green and develops a bitter quality. Slice the clove in half and use the tip of your paring knife to easily remove the germ. To speed up the pace process mince your garlic into small even pieces. Start with tight horizontal cuts, then tight vertical cuts, and finally tight cross cuts. No need to dispose of the root end here. Mince it into the same size and proceed to the next clove. To turn the garlic into paste we'll use salt not only as a flavor enhancer but as an abrasive to grind the garlic mince into a smooth mash. Evenly season your garlic mince with salt. Then carefully use the side of your chef's knife to grind the salt garlic mixture into an even paste, it only takes a few minutes to turn your mince garlic into a homogenized mixture. The paste can be used in Italian salad dressings, Chinese stir fries, Spanish marinades, Moroccan tagines, its applications are limitless

Pickling is an easy time tested method for intensifying the sweet and sour ends of the flavor spectrum and in doing so escalating overall flavor. Pickled onions are an excellent example of this technique. To begin carefully remove the papery skin of your onion, in this case cipollini onions. Taking care not to be wasteful. After peeling slice the cipollini onions into thin rings. Remember once the onions are pickled they will lose a little bit of their volume. To pickle the onions you will need to heat up a sugar and vinegar mixture. We'll add some spices and aromatics for extra flavor. Combine all the ingredients for your pickling liquid turn it up to a boil an pour it over your sliced onions. The pickles will pick up strong sweet and sour notes from the sugar and vinegar. To intensify the color you can add a large slice of red beat to the mixture when it is hot.

    I gotta say, these are my favorite knives. I purchased these for our church kitchen because of the price and the reviews, and then purchased a few for my home. I have other high quality brand knives at home, and I consistently reach for the Mercers over any of these others. They hold their edge, are extremely sharp, and well balanced. I simply make sure that I use my hone on them before each use. Can't beat these knives for the price!!
    That little 3" knife by Mercer Culinary is super sharp! It cuts through anything with ease and the weight is perfectly balanced. The handle feels really secure in the hand and won't slip even when wet. I'm getting the larger versions next!

    I love the handles and feel of Mercer's Genesis product line of knives. I combined the 3.5" paring knife with the Bird's Peak peeling knife and the 5" utility knife as three piece set and gave them to my wife as a "just because" present. She loves them and uses them all the time!
    If you haven't used a knife with a santoprene handle, you really need to. I have this paring knife and the chef's knife. They are my most comfortable knives by far. This has kept an edge for an incredibly long time. I've bought three as gifts, and plan on buying more.
    I haven’t updated my pairing knives in a long time. This one by Mercer is a great replacement and the non-slip handle is something I’ve never had before. I’ll be buying this brand for future needs.
    This is my 3rd Mercer knife and was not disappointed with the smaller 3.5" version here. Very sharp from the factory and easy to grip for safe cutting,
    This is a great paring knife. I love that it has a full tang, instead of the cheaper option. The handle has a great amount of grip, and it is easy to use.
    I'm blown away by the quality of this knife for the price. I had never used Mercer knives before, and decided to purchase this paring knife to give them a test-drive. This stands up to my Wusthofs and other more expensive knives. Although not specified in the description, the edge seems to be around 20 degrees, and holds its edge very well. I usually prefer a riveted handle, but I actually like the feel of the handle very much, and it has a nice heft to it that feels comfortable in the hand. I will probably buy more from this line. I can't recommend this enough for anyone looking for the feel and performance of a high-end knife at a fraction of the cost. I'm not sure how it will hold up over time, but I've been using this knife quite a lot for the past three months with zero complaints. I could go on about how much I like this knife all day, seriously. Also, be warned, the blade is VERY sharp right out of the package.
    This is a great pairing knife. I made the mistake of buying this knife and not getting a guard for it and let's just say I found out how sharp it really was lol.

    I love the look and the feel of this paring knife. I have bought a lot of different brands of knives over the years and I've come to find that Mercer has to be one of the best. This knife comes sharp and I haven't needed to sharpen it yet. It cuts vegetables easily and makes peeling potatoes and fruits less of a chore to do. You can't go wrong with purchasing this knife!
