This emulsion is formulated to be the same strength as a traditional alcohol-based extract, allowing you to substitute 1:1 with an extract in any recipe. To use, simply substitute 1 tsp. of emulsion for 1 tsp. of extract when baking, using a slightly less amount for no-bake items such as frosting or whipped cream. If substituting for lemon zest in a recipe, use 1/2 tsp. emulsion for 1 tsp. zest. Due to its high water content, this emulsion is not suggested for flavoring chocolate or hard candy.

I have had real trouble finding a lemon flavored baking extract or emulsion and while I like this LorAnn Oils one the best of what I've found so far, it still isn't quite what I'm looking for. It's very lemon oil strong but more in a fake scent way than fresh lemons. It doesn't change the color of what you're baking which I appreciate. I will use up the rest of the bottle for various things but probably wont purchase again. We do regularly buy and use many other flavors though -- it's an excellent brand overall.

Love adding this flavor to enhance the flavor of our lemon fudge. Doesn't have an artificial taste, and love that the brand sells smaller bottles so we can try different flavors without having a lot of waste.
I love that you now carry Lorann emulsions they are so much better than extracts since they don’t bake out. If you have looking for something to make your baked goods pop this is it!
I used the LorAnn Professional Kitchen Lemon Bakery Emulsion to enhance a lemonade cake that I made recently and here is what I found: the flavor tastes exactly like an unsweetened Brach's Lemon Drop that my grandmother used to share with me when I was a little girl. This is a great enhancer for fresh squeezed lemon in any recipe IMO. It does not taste like a boxed lemon cake mix that is artificially flavored. The key with this is just don't overdue it. A little goes a long way. I highly recommend this product.
OMG this is one of the worst in the entire LorAnn series!!! There is no color, but the smell is just awful! Try their coffee or red velvet for better options
