This Hatfield Deli Choice 5 lb. souse makes for a savory addition to any charcuterie board. Using a time-honored recipe, souse is a pickled pork product made with select pork trimmings, pickled vegetables, vinegar and seasonings, and then cured and bound with gelatin. The result is a piquant delicacy with rich, succulent pork flavor! Its lush, gelatin base gives it a smooth texture, great for serving on sandwiches, complemented by creamy cheeses and crisp lettuce.

Souse, a form of headcheese with added vinegar, dates back to the middle ages, when it was seen as a peasant food. Over the intervening centuries, charcuteriers tweaked the recipe and turned it into a gourmet favorite. Today, it is a popular component to charcuterie boards, served alongside cheese, crackers, and fresh fruit.
