These big boys have totally changed our operation for the better, but they have a couple of major design flaws that have made the last year of use quite difficult at times. First the good: They hold temp really well considering how often we are in and out of the oven, and have enough space for us to keep cranking out 20" pizzas. The hearth deck cooks pretty evenly and the hot spots aren't as bad as in other ovens that we've cooked with (I have never used a deck oven without them). I also like the "pilot only" option so we can save a little gas when they are not in use. The bad: The insulation is pretty bad. Don't touch the sides or front of the oven on accident or you'll get a minor burn - certainly give the oven 4 feet on any side for safe passage! Read More
