These are extremely unreliable. When the thermostats are in the heating phase, the higher switch will turn off the heat when it is too hot. This means the sugar is disconnected and flies everywhere, not on the cone. When the thermostats are in the cooling phase, the lower switch will turn on the heat with the head is too cool. This means the sugar will not spin or worse, the sugar will rope and twist before you can catch it on a cone. I do not use these anymore on my machines. I have to leave them attached on the head due to balancing only. I have also learned that in time they will break apart and if still connected to wires, they will hit the shroud, spark, and trip electrical breakers. This is very unsafe for anyone operating the machine when it happens and the breaker doesn't trip. I have had to develop my own system for controlling the temperature of the head.
