Taking your desserts from average to exemplary is as simple as knowing your way around a pastry bag. Various tips create exceptional designs, but to use those tips, you need to first know how to use a coupler. Begin by unscrewing the ring at the base of the coupler. Open your pastry bag, and drop the coupler inside, pushing the narrow end of the coupler into the narrowest part of the bag. Then, mark with your finger where the beginning of the screw thread lines up on the bag. Push the coupler up and cut the bag at the marked line. Push the coupler back down through this hole until the hole lines up with the beginning of the coupler's threaded lines. Place the decorating tip over the part of the coupler which is showing through the hole. Grab the ring and screw it back onto the coupler, securing the decorating tip in place. Simply unscrew this ring, remove this tip, and add a different tip if other designs are desired while decorating. Add frosting to your pastry bag and your signature desserts are ready to be decorated!

• Today I am going to be making lemon sugar cookies with this quarter size Waring Convection oven. One of my favorite things to use in the kitchen are pan pals, they are silicon baking mats. I used a half size and cut it in half for this quarter sized pan. They’re nonstick, they’re reusable, so it’s a really great, inexpensive thing to have in your kitchen. I’m just going to scoop out my cookie dough, and using a disher like this helps make all the cookies uniform. I’m going to set the temperature to 325 degrees, set it to convection bake, and place my cookies in the oven. Now I’ll remove my cookies and let them cool while we get started on the glaze. To make the glaze I’m going to use juice from fresh lemons which is easy to do with our lemon squeezer. Then I’m going to add in about a pound of confection sugar and whisk it together. If your glaze is a little bit thick you can add a few drops of water. When you’re finished with your glaze, just add it to your pastry bag. For adding pretty glaze to these cookies, I used the Ateco 8 piece pastry set which is a great way to get started with some basic decorating. Hi, this is Julie Bashore from the Sugar Arts Institute. Let’s have fun with some of the Ateco piping tips. Working with their disposable piping bags that come on a roll, they tear off really easily, I like to work with the smaller 12” bags but they also have 18”. Working with a coupler, remove the nut from the base of the coupler and place the base in the bag as tightly as you possibly can. Working with a pair of scissors, above the screw marks, just cut the edge of the bag and remove that. And then you’re going to choose the piping tube that you’d like to work with, place it on the top of the coupler, and screw it down firmly. This is a piping bag stand; it’s very convenient, especially if you’re piping alone or you don’t want to interrupt anyone to fill the bags, it holds the bags really well and you can slip your icing in there. This is the short-ended Ateco spatula which is quite wide so it’s really convenient for picking up the buttercream. Pull the bag up, place it on the table, and spread the buttercream down to the end. And then of course it’s important not to forget to burp the bag. This piping tip that I’m using is a ruffling pipe piping tip, and it’s absolutely amazing how quickly it works. Have a look, come in close. Doesn’t that give an awesome ruffle? Let’s work with another tip. This is the shell tip; don’t forget to burp your bag. This is great for a border; in fact, I sometimes use it on the edge of my ruffle. It gives a really nice shell design. The tip itself is curved so it gives a nice puffy shell appearance to it. Ateco has a new set that they’ve brought out: polycarbonate plastic piping tips, they are large tips, very strong and very precise in the edging. This one is a basket weave design; it really makes an awesome border. Place the bag over the holder, again, don’t forget to push the butter cream all the way to the edge and burp the bag. It has two edges, a flat edge and a scalloped edge so this makes a great ribbon design; you can also wiggle it or make just a ribbon and also wiggle this. Flip it over and wiggle. Great for basket weave.

    Nice little set coming through with a few different tips and the coupler along with the reusable bag for the price it is definitely worth it
    This starter set is pretty useful if you just start to make cakes. But piping tips are small sizes. The reusable bag that comes with it is very nice and easy to clean too. I sure will buy that bag alone. All the piping tips are marked with the standard number which is convenient.
    This is a great quality bag for cheap! Much nicer than you can get for a similar price at the grocery store, plus it has a nice (but not excessive) variety of piping tips. Used for macarons and cake decorating - love it!
