I bought this oven for my small cafe. We do small batches of cookies and brownies etc... and for the most part the size of the oven works fine for the quantities I need. The biggest problem with the oven is its lack of ability to hold temp. Once a week I bake of a few dozen buttermilk biscuits which need a high temperature to ensure proper rise. I set the oven to its max setting of 500 degrees, wait for the green ready light, and quickly place one room temperature sheet of biscuits into it. The temperature drops to roughly 275 degrees and will not climb back anywhere close to the 425 I would like the biscuits to bake at before they are finished baking.
