A great way to produce consistently high-quality food while getting the most out of your operation's valuable floor space, this single versatile machine is equipped to handle a variety of tasks. Since this unit features 4 open top burners with one standard oven as the base, you can fry and simmer on top while eliminating wasted space by using the oven below for your baking and warming needs. At the same time, you can also keep proteins within reach in the refrigerated base until it's time to prepare them. The 7/8" thick, 36" wide griddle offers plenty of cooking space for pancakes, bacon, burgers, or cheesesteaks, and even features a 4" grease trough for easy cleanup. And for the chef who is looking for precise temperature control, the thermostatic controls allow you to set the temperature of the griddle top to suit the cooking requirements of different foods.
Each of the 4 burners delivers 30,000 BTU of heating power, and thanks to the lift-off heads, cleaning and maintenance is a simple process. Plus, the 12" x 14 1/2" rear and 12" x 12 1/2" front lift-off cast iron grates allow easy access to the burners while supporting your largest stock pots and frying pans. For quick ignition, a shrouded flash tube pilot system for every two burners is standard. And, an extra deep crumb tray further expedites the cleaning process, as it can be removed and emptied when it gets full.
For an additional charge, this item features a flame safety upgrade that protects against unexpected outages by monitoring each standing pilot. If one is extinguished, the gas flow halts to that independent burner section while unaffected burners remain lit. Easily restart the burner using a manual ignition process when the burner is secure.
This range has a standard bakery depth oven that delivers 35,000 BTU for maximum efficiency. two oven racks are included, and with four rack positions, you can customize the cavity to best suit your requirements. With controls located in a cool zone, the oven may be used by itself or in conjunction with the range top. The oven's bottom and door panel is porcelainized for easy cleanup.
The refrigerated base includes 2 heavy duty drawers that can accommodate 12" x 20" x 6" pans. The drawers remain at 34-38 degrees Fahrenheit even when frequently opened and closed in a warm kitchen environment. The refrigeration system uses R-404A refrigerant and runs an off-cycle defrost.
A fully welded frame combines with the stainless steel front, sides, backriser, and lift-off high shelf to ensure long-lasting use in your commercial kitchen. 6" stainless steel adjustable legs come standard. A natural gas connection is required for operation.
