Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. After you have removed visible dirt from the blade of your knife, clean the handle with soapy water. Rinse the knife thoroughly under running water. Dry the knife by using a clean dishtowel. Wash kitchen knives immediately after using them so that the food does not dry on their blades. It is never accepted to place your knife in a drawer without a plastic guard. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. A magnetic bar is a wall mounted magnetic bar design to hold knives firmly in place.

Pickling is an easy time tested method for intensifying the sweet and sour ends of the flavor spectrum and in doing so escalating overall flavor. Pickled onions are an excellent example of this technique. To begin carefully remove the papery skin of your onion, in this case cipollini onions. Taking care not to be wasteful. After peeling slice the cipollini onions into thin rings. Remember once the onions are pickled they will lose a little bit of their volume. To pickle the onions you will need to heat up a sugar and vinegar mixture. We'll add some spices and aromatics for extra flavor. Combine all the ingredients for your pickling liquid turn it up to a boil an pour it over your sliced onions. The pickles will pick up strong sweet and sour notes from the sugar and vinegar. To intensify the color you can add a large slice of red beat to the mixture when it is hot.

    I've owned my Mercer chef knife for almost 10 years now and use it almost daily in my home kitchen. The quality and weight of the knife has always felt more comfortable for me than a lot of the other knives I've owned and now I purchased a few more Mercer knives including a longer boning and a bread knife too. It's still able to hold an edge after a long time and there is plenty left to last another two or three decades of home use.

    Decent worker bee knife that is good for every day tasks. Did dull quickly so be ready to hit it with a sharpener pretty soon after purchase.

    I cannot function in the kitchen without my Mercer knives. The 8" Chef Knife is the one I use more than any other. The length is great for just about any type of slicing and I have found that while it does require occasional sharpening, it holds it's edge nicely.

    First, I'd like to correct an error in the description- as you can see in the pictures, the handle is a comfortable, soft, slip-resistant molded santoprene which completely encases the rat-tail tang of the knife. It does not have a full tang, nor does it have riveted handle scales (which are what's found on knives with full tangs). At one point, a full tang with a triple riveted handle was considered the best. With modern technology, that is no longer the case, and many actually prefer molded santoprene for comfort, slip resistance and durability. I believe what is meant in the ad copy is that the bolster is fully webbed (the bolster's web, sometimes called a quillon or finger guard, runs down the full length of the choil). The web is a part of the knife's bolster, not part of the tang. Mercer also makes forged knives with an abbreviated bolster web, which facilitates sharpening (item 470M21078), as well as the Renaissance line, which has a triple-riveted full tang handle and a webless bolster (item 470M23510). At any rate, all of these knives are an exceptional value. The balance and blade profile are good, there's some nice distal tapering, and the quality of the steel is on par with more expensive German knives. They're well made and durable enough to withstand daily use in a commercial kitchen. At these prices, it's hard to go wrong. Read Less Read More

    What a knife cuts stuff like butter. Cut bricks of cheese by hand or a Rubén at easy. We replaced all our knifes and for the price you can't beat it.
    I love this knife. It is perfect for daily use and comes incredibly sharp. It has a lot of weight to it, which gives a great feel when holding and using it.
    I was totally surprised by this knife. I bought it so that I would have something cheap and sharp to use while I work on learning how to sharpen my other knives. So, not high expectations. But, there is no hint of cheap about it. It is sharp; it is very good looking. The handle is comfortable and secure. The balance and the weight are just what I want. I could not be more pleased.
    Who doesn't need another sharp durable chef's knife? This one cuts and slices with the best of them. Don't hesitate to pick this one up for your establishment.
    For the price, these bad boys are a workhorse in the kitchen. With proper care and sharpening, they can last for a lifetime, and are easy to clean.
    This is one of the sharpest knives right out of the box. It is my first Mercer, but I do plan on purchasing more from the Genesis line. It is incredibly strong with the forged blade and extremely versatile.
    This was my very first knife in culinary school. Has a nice weight to it and comfortable handle for a good grip. I would highly recommend this knife. Mercer is a good name brand and this knife is definitely a solid chef knife
    I was way overdue for a new knife. After looking over the options went with this knife and couldn’t be happier. Super sharp, nice feel, good weight solid knife. And love the grippy feel of the handle.

    Mercer is a brand that I can trust when it comes to knives. First of all, the metal blade is from Japan so I think it's high quality. Secondly, the price is affordable for its quality. As long as we take care of the knives properly, it can last for years. Have hundreds of knives, and Mercer knives are one of the most durable for its price. Highly recommended for cutting vegetables because of this forward back motion handle. Fits well for an Asian sized hands.
    This knife is incredible. It's the sharpest knife I have ever used. I highly recommend this product for cutting vegetables, tomatoes, steaks, chicken, pork loin, etc.
    This is the best knife I have every used. It is amazingly sharp and maintains that sharpness for a long time! If I ever need to replace it, we will be buying another just like it.
    You can't go wrong by purchasing this! This is an excellent quality knife. It is very sharp and firm. It doesn't require a lot of sharpening and it is well made. This is a must have in any commercial kitchen.
    Overall this is a great knife for most purposes. I find the handle a bit slippery but the blade is great and not too thin nor too thick.
