How is the top diameter measured in frying pans and woks, and how accurate is this measurement?

The top diameter is the measurement across the pan, from the interior of one side of the rim to the other. These measurements are approximate because many frying pans and woks have a curved upper rim, making precise measurement difficult. The standard naming convention uses top diameter, so while multiple brands may offer a 10" pan, there may be slight variations in size between each brand's 10" pan or wok.

Some carbon steel pans and woks are shipped with a protective oil coating to prevent rusting before their first use. They should be thoroughly washed with warm, soapy water to remove the oil and then properly seasoned before use.

What's the difference between a riveted and a welded handle?

A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.

For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. Both are long lasting solutions for fry and sauce pan handles because they are durable and can withstand heat.

This pan is well-built and solidly made. The lack of rivets makes for a smooth cooking surface all over with nowhere for food particles to get trapped. My only note is that the manufacturer seasoning instructions don't work well on an electric stove - you just get a circle of seasoning in the middle. Excellent multi-tasker, still perfectly flat on the bottom, and always predictable results. After the first use on a gas rage this pan looks like a mini wok. The center developed a large bugle around 1cm proud of dead flat. It spins around like a top when on the flat counter after cooling down. Total trash. I added this to my collection since Made In doesn't make a 14" carbon steel pan.

The seasoning process provided by Matfer Bourgeat does NOT work for those that have an electric coil stove. I ended up seasoning the pan in the oven to develop an even coat all the way around, and have enjoyed the pan since I purchased it. That said, the bottom has warped and it no longer sits flat on my range. This wouldn’t be a problem on a gas range with metal grates, but if the pan needs to be in contact with the burner to heat evenly, then the warping is a significant issue. Despite this, I am quite happy with the purchase and use it at least once daily.

I seasoned the pan using a very very light coating of safflower oil in the oven for an hour at 25 degrees above smoke point of oil and it has been wonderfully non-stick since. Passed the egg test (butter + egg = gliding egg around the pan). Have also used for 3 egg omelet and it worked perfectly without sticking. Provides great browning for things like onions. Would definitely recommend. Definitely get a handle cover though - it gets hot!

There is a reason this pan is top rated by Cook's Illustrated. It's a great pan for the price. Heavy enough too heat evenly, but not so heavy as your 12 inch cast iron pan, not even close. Very non-stick once it has been seasoned. That was a little bit of work; the manufacturer recommends washing thoroughly, then doing a stove-top process with oil, salt, and potato skins for 15 minutes. It went well, but the house smelled of hot oil for quite a while! Still, entirely worth it; my hash browns this morning were delicious and easy.

The first couple of things that are very noticeable are the weight and the welded handle vs. riveted handle. The weight was exciting; it's a solid construction and the even heating and distribution is wonderful. It's taken a little getting used to because it's different, but that's a good thing.
