The blade is also conveniently double-beveled and flat ground to a 16 degree angle on each side to provide the best performance possible from every blade. Crafted from proprietary VG-MAX 68-layer Damascus steel, this knife's blade is built to provide you with the ability to create smooth, accurate cuts. This proprietary material, only available from Shun, is extremely fine-grained to get the most out of the steel, and its excellent construction also ensures a sharp, long-lasting blade in any kitchen environment. Resistant to corrosion and wear, this knife is also constructed with a composite tang for superior balance.
