I have bought several pieces of equipment from webstaurantstore.com. Some were bad - a different brand mixer which disappeared from my order history and every where as it deserved - total junk. Some were okay - the bar cooler which saved me a lot per month in electric but sprang a leak on the low side after 24 months - a decent amount for a service every year keeps that puppy putting along. And now this guy - the dough sheeter. If it doesn't break it is going to be an amazing labor saver. It took five dough balls to get the thickness and width of crust we wanted. We use an 8 oz ball and it had no trouble spitting it out in a perfect circle. I am totally impressed. We had 75 crusts made in a half hour. Really great. Now time will tell if it can hold up. We only use a couple times a month so it should be years of use.
This machine is a life saver. I've gone from taking 2 hours to roll out dough by hand to giving it a couple of passes and being able to do the same volume in 30 minutes. The only thing that I don't like so far is the pin for changing the thickness and it could simply be a case of me needing to get used to it since I'm accustomed to a much larger reversible sheeter. It's a little finicky to get the pin correctly in the slot which slows you down a bit when you're trying to work into a flow
Dough sheeter works very well. No complaints at all. It’s a little noisy though. I would compare it to a small vacuum cleaner you have to talk over.
This dough sheeter saved me! I had elbow surgery and struggled to roll my cookie dough. The sheeter was an investment but it made a world of difference for me, my health and my business!
After looking at several dough sheeters, decided to purchase the Estella EDS12S and am thrilled with it. For the prices I believe worth it (clearly can be used professionally as well as home) and have already used it several times. Wife and I love the ease of use,, performance and ease of making pastry dough and pizzas. Highly recommended.
