13" Forged Stainless Steel Knife

The 13" hardened, forged stainless steel knife is great for a variety of slicing applications. The slice thickness can be adjusted up to 1 5/16" to allow for fine cuts or thicker slices. A 1/2 hp motor delivers the power needed to tackle constant slicing.

45 Degree Feed Tray

The feed tray is mounted at a 45 degree angle, which uses gravity to better hold the product against the knife so you apply less pressure while ensuring a more consistent product. It can accommodate rectangular products up to 10 1/2" x 6", square items up to 7 1/2", or round products up to 8 1/2" in diameter.

Manual Product Carriage

The manual design on this slicer allows you to maintain complete control over the slicer during operation, and it comes with an ergonomic push handle on the side.

Product Pusher

A metal pusher on the feed tray allows you to provide pressure against the product being sliced, preventing slipping, ensuring a consistent cut, and also guarding your hands from the slicer knife.

Removable Sharpener

The sharpener boasts a Borazon stone design to provide fast, precise sharpening, and it can be submerged during cleaning. It clips onto the feed tray and can be stored on the back of the unit when not in use.

Durable and Easy to Clean

A one-piece polymer base and feed tray give this slicer a clean, sleek look. However, this also reduces seams and hard-to-reach places where bacteria can grow, making the slicer as easy as possible to clean.

Safety Interlock

Safety is a top concern in slicer operation, and that's why this unit comes with a mechanical gauge plate interlock. Once the feed tray has been removed for cleaning, heavy duty wires prevent the gauge plate from opening, shielding the knife and preventing injury to the operator.

Hey, I'm Justin Smillie. I'm the Executive Chef of Il Buco Alimentari e Vineria here in New York City and today we'll be demonstrating the Berkel X13 slicer. What we love about this slicer in the restaurant is it's easy to use, the variability of slicing, how easy it is to clean, and it's important to have the best slicers because we cure our own salami in house to sell at Alimentari, so the final product is what really comes down to it with the Berkel. The first thing we're going to slice today is some of our house-cured salami. The great thing about this slicer is how safe it is for all of your employees to use and how it actually helps you to line up smaller cuts, and again, it's all about versatility. Really smooth action and a very consistent, even slice. Now, take a look at this. Fantastic. So the next thing that we're slicing right now after removing the safety fence is slice some lardo, which is the cured fatback of the animal. What makes this machine so amazing is it never really cooks the fat, so you get smooth, even slices every single time. The next piece of meat that we're going to do is medium format toccata. What's great about this is we have nice, even slices all the way through, and again, what makes this slicer great is the versatility between large cuts and small cuts. Delicious! With this slicer, sometimes you need an extra hand in the kitchen and the expert team helps fulfill all those needs. So we can go, loading the fence in again for safety features, and on. I can be doing, you know, other tasks while it's doing all the work for me. And finally, we'll do our bresudo despala, which is the shoulder muscle of the animal. It's cured in the style of bresudo. Every slice is even and thin. So now that we've sliced all our meat and we've sent out all our boards, you get to the nitty-gritty, which is the cleaning of the machine. Under, it has its own little kick stand, which is a great advancement and in the machine itself on the rib table is a very wide, open architecture which makes it very easy to clean. It's also very quick to wipe down controls. What must be said about the Berkel X13 is how easy it is to sharpen. You just add on, which is super easy to clip in, the sharpening mechanism and you're ready to go slice some more. And as we demonstrated today with the Berkel X13, its ease of use, its ease of cleanliness, and I think the results show on the final plate.

    Berkel really makes the best slicer in the business right now. High quality at half the cost of other slicers. Easy to clean and use there really isn't a reason to buy any other slicer.
    Holy cow! This is the cadillac of slicers. It has cut our prep time down from hours to minutes. Easy to use, anyone can just start using it with a little instruction. The sharpener works well also. Expensive but worth every single penny.
    This is truly a remarkable machine! It is so incredibly easy to use and to set up. Berkel did an extraordinary job with this and I recommend it for any deli.
    The ladies at our family deli love the Berkely X13 given its ability to power through cheeze and relative ease of cleaning.
