The versatile, easy-to-use Alto-Shaam 767-SK cook and hold smoker oven cooks, roasts, re-heats, and holds food for delicious, consistent results every time! It smokes with real wood chips, and its built-in smoke timer allows you to adjust the amount of smokiness from mild to heavy! The Alto-Shaam 767-SK features the innovative Halo Heat System which utilizes a unique, electric thermal cable that's wrapped around three sides of the smoker oven, providing a gentle, radiant heat source for your food. The result is no cold or hot spots, or air movement to dry out your food! This feature also reduces product shrinkage for higher output and lower waste!

Roast, proof, braise, reheat, ferment, sous-vide, and hold more in the same cabinet to provide a better distribution of workloads and relieve other pieces of equipment. For added convenience, a removable food probe senses the internal product temperature and automatically shifts the unit to hold mode once the cook time parameters have been reached.

Higher Yields, Better Food Quality

This cook and hold oven uses Halo Heat technology to provide better food quality and higher yields. Instead of using high heat elements, humidity, or fans, radiant heat is utilized for a gentler cook that evenly surrounds the food. Maintain precise temperatures throughout the cooking and holding process for high-quality results every time. This unit has a temperature range of 200 to 325 degrees Fahrenheit and a hold temperature range of 85 to 205 degrees Fahrenheit. It smokes with real wood chips, and its built-in smoke timer allows you to adjust the amount of smokiness from mild to heavy!

Place Anywhere

With a ventless and waterless design, you can place the cook and hold oven anywhere. No traditional oven hood or outside venting is required, so you can save on hood installation and operating costs. A waterless design further reduces installation and operating costs with no plumbing, drains, filtration, or associated maintenance.

Convenient Capacity

This unit has a total capacity of 100 lb. and features a set of 3 wire shelves that can accommodate up to 7 full size (12" x 20") food pans or 14 half size (12" x 10") food pans. A set of 2 stainless steel racks are also included, adjusting between 11 interior pan positions to allow for a wide variety of configurations.

Simple Cleaning

For easy cleaning, a removable drip tray and a drip pan with a drain are mounted to the unit's front exterior, while a set of (4) 3 1/2" casters allow for mobility while cleaning. 2 casters are rigid, while the other 2 swivel and feature brakes for stationary use. This unit requires a 120V electrical connection.
