What is White Glove service?

Standard common carrier delivery options cover the cost of getting an item to your shipping address but our White Glove delivery service does that and more!

The White Glove agent will call to schedule a Call Before Delivery within a four hour window, which gives you the flexibility to work around your busy schedule and to prepare the space where your item will be placed. Upon delivery, trained professionals will unload your large item from the truck, bring it into the room of choice, unpack the item and remove all packaging debris from the premises.

Please note that White Glove delivery will typically add 5 - 7 business days to your order's transit, and only includes 30 minutes of on-site time. If on-site time beyond 30 minutes is required, you may be responsible for additional fees. While the agents will bring the items into the location of your choice, this service does not include set-up of the items being delivered, such as installation of casters, shelves, or other accessories. Small items will not be unpackaged individually; they will be set in place and debris and packaging material will not be removed.

I was in a butcher shop early in my life. Our family business was a butcher shop. My name is Charlie and I was a butcher. I was looking for this process of how to cook a prime rib and went to the food shows, which I was a butcher and I never went to food shows, and stumbled upon chefs with Alto-Shaam and he helped me and told me the theory of cook-and-hold and how I can actually tenderize a piece of meat overnight in an oven. We cook USDA choice top brown and we cook it overnight. We put it in the oven at 4 o’clock in the afternoon the night before the show starts. We do the electronic settings of 250 cook, 100 degree probe, and 140 hold, and we press the start button. I come in in the morning and here the lights are flashing, everything looks good, and my piece of meat cooked overnight and finished at 131 degrees. Amazing! I have restaurants now where I have 28 cavities and I cook every night in those cavities and all the proteins that I cook in those all finish within 1 degree. That’s pretty amazing stuff.

Hello, this is Chef Robert with Alto-Shaam and today we are going to learn how to operate the standard control Alto-Shaam Cook and Hold Smoker. All right, we’ll start with a brief overview of the controls. Here’s the power switch, we have the timer, the holding thermostat, cooking thermostat, and the smoke timer. This is a one hour timer, so when we’re setting it we have fifteen minutes, thirty minutes, forty-five minutes, and one hour. To set the oven for preheating we’ll turn the power switch on and we’ll set the holding thermostat. The thermostats will turn either direction, so we’re going to set this one 165 degrees. The cooking thermostat also will turn both directions and we’ll set this one for 250 degrees. Later we’ll come back and set the smoke timer. Now to activate the preheat we push the timer button and we can start to use the up and down arrows to set the time we want to cook for. The oven will take about thirty minutes to preheat. While the ovens preheating we’re going to take our wood chips and soak them in water here, and then these wet wood chips will actually go right into the smoke box. Now the wood chip box goes right in to the back of the oven. Now that the wood chips are in and we have loaded our food, we just have to adjust the control to the cooking time, so I can use the up or down arrows, and then we can take the smoke timer and set it for the required amount of smoke. We’ll turn past the time we want and turn it back so for thirty minutes, that’s where we need. The unit is now cooking and smoking. Now that we have finished cooking, we have taken the food out, we have removed the shelving, and cleaned the inside of the oven, and all we have to do is turn the power switch off. All right, well now that we have cooked in this oven the next time we need to operate it we just need to turn the power switch on. If we have not changed the holding thermostat and cooking thermostat, it’s going to remember where we had those last time but I can still adjust them if needed. And then we’re going to activate our timer and we can put our oven in preheat mode for the next cook cycle.

The versatile, easy-to-use Alto-Shaam 767-SK cook and hold smoker oven cooks, roasts, re-heats, and holds food for delicious, consistent results every time! It smokes with real wood chips, and its built-in smoke timer allows you to adjust the amount of smokiness from mild to heavy!

The Alto-Shaam 767-SK features the innovative Halo Heat System, which utilizes unique, electric thermal cable that's wrapped around three sides of the smoker oven, providing a gentle, radiant heat source for your food. The result is no cold or hot spots, or air movement to dry out your food! This feature also reduces product shrinkage for higher output and lower waste!

With simple, easy-to-set controls, you can cook your roast, ribs, or other food for a specified set of time, and the oven will automatically switch to a lower temperature "hold" mode where the meat will continue to tenderize.

The Alto-Shaam 767-SK cook and hold smoker oven comes complete with two removable side racks with eleven pan positions. It also includes two stainless steel wire shelves, a stainless steel rib rack, a removable stainless steel drip pan with drain, and a wood chip container. The smoker oven also includes an exterior drip tray and (1) sample bag each of cherry, hickory, apple, and maple wood chips.

A set of 3 1/2" diameter heavy duty casters (two with brakes) makes it easy to move the cook and hold oven.

The Alto-Shaam 767-SK cook and hold smoker oven features simple external controls, including a main ON/OFF switch, a cook thermostat (100 to 325 degrees Fahrenheit) and a hold thermostat (60 to 200 degrees Fahrenheit) that have their own indicator lights, and a 12-hour timer. A 60-minute smoking timer is also included. The exterior is made of durable 20 gauge stainless steel, and the door features a positive-catch door latch. A 120V electrical connection is required for operation.
