Add a new twist to your classic foods with the Alto-Shaam 1000-SK/II low temperature cook and hold smoker oven! This smoker uses real wood chips to produce flavorful smoke for an authentic taste and appearance, and its built-in smoke timer lets you choose mild, medium, or heavy smoke flavor for different recipes and products, including cold fish and cheese. Plus, to help get you started, the unit comes with 4 complimentary sample bags of wood chips.

Thanks to the unit's patented Halo Heat, product will be cooked, roasted, smoked, or re-heated at a uniform temperature for reliably delicious results! This innovative technology also minimizes shrinkage and promotes a longer holding life, helping to boost the efficiency of your operation and to reduce overall food costs. The oven is controlled by a classic on/off power switch, a cook temperature knob with a temperature range of 200 to 325 degrees Fahrenheit, and a hold temperature knob with a range of 60 to 205 degrees Fahrenheit. The digital display offers up and down arrows to set cook and hold time. It also features a 60 minute smoking timer. Indicator lights let you know what stage of the cooking process the oven is currently performing so that you can work more efficiently.

To withstand busy, high-volume kitchens, the unit features a sturdy, stainless steel exterior. Its single door is also stainless steel and features a magnetic door latch to ensure that it shuts securely every time. A set of two stainless steel racks are included, adjusting between eleven interior pan positions to allow for a wide variety of configurations. This adjustability accommodates your ever-evolving and expanding business needs, making the unit a great, long-lasting investment. Plus, a stainless steel rib rack and two stainless steel wire shelves are also included, further maximizing the oven's versatility.

In total, the oven has a capacity of 120 lb., 3 full size hotel pans, or 7 full size sheet pans. For easy cleaning, a stainless steel drip tray is mounted to the unit's front exterior, while a set of 3 1/2" casters allow for mobility while cleaning. 2 casters are rigid, while the other 2 swivel and feature brakes for stationary use. This unit requires a 208/240V electrical connection and comes equipped with a voltage conversion switch to select voltage at the time of installation.
