High gluten flour contains a greater percentage of gluten than other types, making it perfect for baking hearty artisan breads, crusts, bagels, and crusty rolls! Gluten gives dough its elasticity, which allows stickier products to properly rise. High gluten flour is also a great ingredient for making dough that needs to be frozen, such as pizza and biscuits.
Since high gluten flour is a mix of various hard wheat, it has more protein than all-purpose and other flour types made from soft wheat. This added strength gives it excellent mixing tolerance, and prevents dough from breaking and crumbling when taken from the oven. You’ll also be able to find high gluten flour with a slightly lower protein percentage than the other high protein flour mixes, which is ideal for baked goods that need even more body and volume.
