This flour worked great making pizza dough. It is the same or better than the Caputo 00 pizza flour. I know the old folks stand by the 00 flour but when i stretched the Caputo flour it would tear a hole in my dough. Pillsbury high gluten flour would not tear when as stretched to make a very thin pizza . Like it states it is a strong flour and it is.. All in all it was well worth the risk to try the Pillsbury flour and it's a little cheaper than the Caputo pizza flour.
