This flour worked great making pizza dough. It is the same or better than the Caputo 00 pizza flour. I know the old folks stand by the 00 flour but when i stretched the Caputo flour it would tear a hole in my dough. Pillsbury high gluten flour would not tear when as stretched to make a very thin pizza . Like it states it is a strong flour and it is.. All in all it was well worth the risk to try the Pillsbury flour and it's a little cheaper than the Caputo pizza flour.

Home cook. Made muffins, pie dough, bread, waffles, tortillas, cookies. Great quality. I have not had one problem with protein content so far all baked goods are soft, fluffy, well risen and tasty. Being a home cook the 50lb bag is much larger than you think. I ordered for Shelter-in-place baking and I still have half a bin left.
