It produces excellent loaves particularly for the high altitude where I'm at, where all other flours I have used it is a crap shoot whether or not i get full rise and good crumb, can not recommend this flour enough on this point alone. I find it very good for full rise fluffy pepperoni/cheese rolls, onion bread, cinnamon raison bread, for oatmeal bread its superb, baked loaves take very well to freezing, but the best is a straight up hearty white bread. Really takes well with addition of a small amount of malt, which produces an even better crust to die for and an excellent chewy texture throughout, gives the yeast an even more consistent rise. You can not go wrong with this flour.
